Eggless & Buterless Cakes, Biscuits & Muffins

    Cinnamon buns

    Cinnamon buns are really easy to make, and the soft buns tastes heavenly good. This recipe is for 40 servings, great to freeze them and then you can serve them whenever you want to.     For the dough:
    - 50 g yeast
    - 125 g butter
    - 5 dl milk
    - 1 egg
    - 1,5 dl sugar
    - 1,5 litre wheat flour

    Stuffing:
    150 g butter (room tempered)
    150 g sugar
    8 teaspoons cinnamon powder
    (nutts if u like to)

    To add a glow and moisten them more, paint the cinnamons with 1 egg, or you can use milk.

    Melt the butter and mix it with room tempered milk. Add the yeast and mix well. Then add the sugar and the egg. Followed by the flour. Knead the dough well, cover it and let it rest for an hour or until it doubles in size.

    Meanwhile prepare the stuffing, I use almonds which tastes really good. And preheat oven to 350 deg.

    After an hour, knead the dough and divide it into two. Roll the dough flat until it is approximately 21 inches long and 16 inches wide.

    For the filling, combine the brown sugar and cinnamon in a bowl. Spread the softened margarine/butter over the surface of the dough and then sprinkle the cinnamon and sugar evenly over the surface.

    Bake for 10 minutes, or until lightly brown on top as it varies from oven to oven.

    came across this thread only yesterday and tried to post an eggless cake. But it bounced.Here I go again.It is micro waved one.
    THIS RECIPE IS FROM TARLADALAL.COM

    Eggless chocolate truffle.
    Maida-1/2 cup
    cocoa powder - 2 tbsp
    powdered sugar- 1/2 cup (1/3 if doing icing)
    melted butter - 1/3 cup
    sour curd - 2 tbsp
    soda bi carb - 1/4 tsp
    chocolate or vanilla essence - 1/2 tsp

    Sieve maida and cocoa together, keep aside.
    Add soda to curd, mix and keep aside.
    In a micro wave bowl, heat 1/4 cup water on high for a minute.
    Take out, add sugar and butter and mix to dissolve sugar.
    Now add maida cocoa, essence,curd mixed with soda and mix well.
    Pour this in a greased microwaveable mould and cook on high for 4 minutes.
    Take out and keep closed for 10 minutes for the cake to get cooked further. Demould and serve.

    For a sponge cake, omit cocoa powder and add only vanilla essence.
    Add 1/4 cup of chocolate chips.
    Add 1 tbsp of instant coffee powder for chocolate version for mocha cake.

    I shall post the icing recipe soon, it is with my friend. I tried this and it turned out perfect.

    Hi all,

    I am posting a recipe for Eggless Chewy Chocolate Chip Cookies which has turned out heavenly.

    Eggless Chewy Chocolate Chip cookies
    To make 30 chewy chocolate chip cookes.

    2 tablespoon flour
    1 tablespoon sunflower/soya oil
    1/2 teaspoon baking powder
    4 tablespoon water

    Beat well until it is fluffy. (This is an egg substitute for 1 egg)

    Add to this mixture

    1/2 cup melted butter
    1/4 cup white sugar
    3/4 cup brown sugar (without lumps)
    2 tablespoon honey
    1 1/2 teaspoon vanilla
    1/2 teaspoon baking powder
    1/2 teaspoon bicarbonate soda
    1/4 teaspoon salt
    Beat well for about 5 minutes

    Add to the beaten mixture

    3/4 cup plain flour
    1/2 cup cocoa powder
    3/4 cup chocolate chips

    Knead well to form cookies dough
    Make it into lemon sized balls
    Flatten slightly to Amai vadai size
    Butter the baking tray and place on tray for baking with space for it to flatten further
    This is to be baked at 175 degree celcius for about 14 mins. When you take it out, it will still be soft. Leave to cool for about 15 to 20 mins before serving .
    You need to have 2 to 3 baking trays - Stainless steel plates are fine so that you can bake one batch after another wothout having to wait for one batch to be out after cooling.
