The muffins in the pic were from a mix (Martha White Sweet Corn Muffin mix purchased at Walmart). There are many good corn muffin mixes in USA like Jiffy, Martha White, etc.
As per the corn muffins, this recipe will be good: Basic Corn Muffins - All Recipes Often grated cheese (cheddar would be good...something a little sharp) or diced chillies are added depending on what you are going to serve with it. If you don't like a sweet muffin then omit the sugar or reduce (I like a little sugar myself). If you just do them plain, you can serve with butter, jam, honey, molasses, etc as a topping. These are good with anything from a simple soup to roasted meat dishes. They are particularly nice with bean dishes of all kinds. Leftover ones can be crumbled and used instead of breakfast cereal with hot milk. Happy eating!
Hi Tina, I was planning to make corn muffins for brunch today and here you have posted a recipe link. Thanks for the link. Im making it right away Will let you know how it comes out. I made quiche yday and it was like by both of us. Enjoyed our meal. I tried it with stir fry veggies. Will try it with spinach too and let you know. I just love the next to no crust. Its a much healthier option i feel. Thanks P
