I have heard a lot about this too. But somehow, I am really hesitant to follow this technique because of the potential for loss of all the water-soluble vitamins. Also the yesteryears - people could have compensated for this loss in nutrients with farm-fresh, minimal chemicals (or even home-grown) veggies, fruits and grains (which is a lot harder for us now). @shravs3 - do share if you know or come across any studies/articles/talks showing that this loss may not be considerable. would love to learn and correct my interpretation of this.
