    Dear Cheeniya sir and others,

Aafter reading this article i should say EURO is not everything! Me i miss all the dosa varieties,...the first 2 years after i came here, when i returned to India i would first visit a restaurant to have dosa.....the MASALA Dosa. And to my surprise i had discovered all these types you guys have discussed, in of all the places , Kolkatta and then IN Delhi!
You guys have missed out on the LOOOOOONG DOSAS which reach the next two tables too!
Now u make me miss the dosa. ...have not had one for a loooong time....surprisingly no dosa restaurants at all.here .......can find a normal dosa in a srilankan restaurant, but i felt i did a better job at home....what with Chitvish#s recipes available now for us!

Good observation , and nice writeup!

    Dear Sudha
I am surprised that there could be places where no dosas are available in our planet! May you be granted a long holiday with nothing but dosas to eat! And please dont even mention Srilankan dosas when we are talking about the divine stuff that our restaurants and homes dish out. It's pure sacrilege!

    Dear Cheeniya,

I had a good time reading this piece. Now to add my own varieties of Dosais: red, green, yellow, and now trying to see if i can come up with blue, and other colors!!:-D

Yes , the varieties of dosais these days are mind boggling. Me i prefer the good old regular dosai and the masal dosai. Not for me the ones with cheese or any other such ingredients.

    Dear Vandhana
I agree with you on the basic Dosai. The one which is white on one side and gold on the other. I also dont like dosas served with a dozen accompaniments like Kunnakkudi Vaidyanathan in concert! It destracts a lot. What say you?

Don't know about all of you...reading all about dosais, my eyes have turned large and round, like vatta vatta dosais..and my tongue can just about taste the good old vendhaya dosai with some coconut chutney and a red onion chutney.
Okay, will go soak some rice and ulundhu for tomorrow...........

    L, Kamla:)

    Dear Chitra
Invitation gratefully accepted. This Madurai special looks like Paruuppu Thenga! I hope there is no ritual attached to eating of this Dosai. I mean where to start, where to finish etc. I have seen once in the Restaurant I was referring to, a bulky man flattening this Rocket Dosai with a single blow! I felt sorry for the Dosai which stool tall and proud one second and in the next just lay on the gleaming plate like a frog run over by a truck! I am sure that it was not the way it was intended to be consumed.
    Sri
