One simple dish that I end up making atleast twice in a week is Chapathi Upma also called "choora" here in Maharashtra

Make extra chapaties at night and break it in pieces(any shape ok)
in 1 tbsp oil, add mustard, green chilli pieces and lenghth wise cut onions...saute for a min and then add chapathi pieces. add salt to taste

let this cook well and garnish with coriander...

You can even substitue chapati with bread pieces and Pav pieces..(but cover it then for 1-2 mns) so that it cooks well.

If you have time, you can add boiled potato pieces as well

This is doen so fast that my DH often does this while I making coffee.. takes the same time :)

Amazing list. How about paneer sandwiches sometimes? Here is the recipe:

    Ingredients:

    1 cup Grated Paneer

    1/2 tsp roasted Cumin powder

    1/4 tsp Black Pepper

    1 tsp Lemon Juice

    1/4 tsp Chat Masala

    Salt to taste

    4 tsp chopped Tomatoes

    4 tsp chopped Coriander leaves

    4 tsp chopped onions

    Whole Grain/White Bread slices

    2 tsp Butter

    Method:

    1) Take crumbled paneer in to a bowl, then add roasted cumin powder, add onions, tomatoes, black pepper, lemon juice, chat masala, coriander leaves, salt to taste and give it a good mix

    2) Take bread slice and butter sides of the bread, now add stuffing and spread it evenly.

    3) Now top it with other slice of bread.

    4) Roast from both the sides until it gets nice crust.

    5) Serve with some salad, fruit juice or cofee/tea!

    Try this recipe

Mix grated carrots, chillies sliced, finely chopped onions and salt to a cup of besan. Mix thoroughly with water to make the batter to the consistency of dosa batter. Spread on a skillet and make like adai/dosa.

    This is another recipe

Take a slice of sandwich bread. Dip it in dosa batter and make like dosa on tawa.
