The ready to eat packets are good. I have tried them.

Also, he can carry an electric rice cooker so he can cook rice in it and buy yogurt locally.

 

If he has kitchenette available, things would be very easy for him. You can give him dry flours mixed with salt, chilli powder and various spices. He just have to add water and make dosas from them.

It is not possible for you to pack 3 * 14 = 42 meals to your spouse. Please go easy.

Sub-way sandwiches are very good for health. He can have one of his meal there. Boiled eggs, fruits, ready to eat or heat and eat food packets and nutritious snacks may be good enough.
