Baked Peach-Coconut Pudding .....easy and tasty

    Hi Everyone,

This is a recipe for an easy and delicious peach pudding. You can substitute peach with any soft and sweet fruit of your choice like mango, berries etc. I am not a regular baker and had never made a baked dessert before this . So if i can do it, anyone can !
    Here goes Bow...............

    Baked Peach-Coconut Pudding.

3 cups of thinly sliced peaches
1 cups of dark brown sugar, packed
2 cups bread crumbs ( i churned about 4 slices of fresh whole wheat bread, crusts removed , in the blender).
    2 cups of milk
    2 eggs
    pinch of salt
    1/4 cup butter
    1/2 - 1 tsp cinnamon powder.

    Topping :
1 tbsp each of walnuts, cashews , or anyother dry fruit
    1 tbsp sliced almonds
    2 tbsp shredded coconut
    1/2 tsp grated nutmeg/cinnamon

    Instructions :

    Preheat oven to 350 F.

    1. Scald the milk in a pan.
    2. Pour over bread crumbs in a deep bottom dish.
    3. Add the melted butter. Mix it all together.

    4. Beat the eggs with whisk. Add salt, sugar and cinnamon to it. Add the egg mixture to the bread-milk mix and mix it all together.

    5. Grease a baking dish with butter. Make a single layer of peaches in the bowl with 10-12 slices and add remaining peaches to the egg-bread mixture. Pour the mixture over the peach layer.

Bake in the lowest rack of oven for 1 hour.

Take it out of oven after one hoir and let cool for 10-15 mins.
Once cool , flip it carefully on to a serving plate. Put it the refrigerator to cool.

    For the topping :

In a plastic bag, take the dry fruits(walnuts, cashews, pecan ) and crush them with the back of a spoon.

In a pan, dry roast the coconut, almonds, crushed dry fruits till they are light brown and aromatic. Stir in the nutmeg before removing.

Take out the pudding from the refrigerator. Layer the topping all over the pudding covering it completely. Put it back in refrigerator.

    Serve cold. Enjoy !

    Serves 6-8 people.
