    Macaroni Risotto - a Spanish dish with rice & macaroni

    First layer:

    Uncooked thin rice - ¾ cup - cook till soft

    White sauce made with:

    1 cup milk

    butter - 1 ½ tbsp

    Cornflour - ¾ tbsp

    Second layer :

    Macaroni - ½ cup ( boil with salt, 1 tsp oil & plenty of water, then drain)

    For the sauce:

    Oil - 2 tbsp

    Onions chopped - ¼ cup

    Garlic - 4 cloves, chopped

    Water - ½ cup

    Grated cheese - 2 ½ tbsp

    Tomato ketchup - ½ cup

    Chilli powder - 1 tsp

    Salt, pepper & sugar to taste

    Cool the cooked rice & mix with white sauce.

    Spread this as the bottom layer in a baking dish.

    Over that spread the cooked macaroni.

    For the sauce, heat the oil.

    First sauté the onions & then add garlic.

    Now add tomato ketchup, water, chilli powder salt, pepper, sugar & grated cheese .

    Boil & simmer to get a thick sauce.

    Pour this over the macaroni.

    Bake at 200 deg C for 20-25 mts.

    Baked Macaroni & Cheese - the “forever” favourite baked dish.

    Cut macaroni - 2 cups

    Butter - 2 tbsp

    Onion - 1, minced

    Maida - 1 tbsp

    Milk - 2 cups

    Grated cheese - ½ cup

    Boiled green peas - 1 cup

    Mustard powder - ½ tsp

    Pepper - ¾ tsp

    Butter - 4 tsp

    Bread crumbs - ¾ cup

    To sreve with:

    Toasts - 3 ( cut into triangles)

    Boil macaroni with salt, 2 tsp oil & plenty of water.

    Drain & apply a tsp of oil to prevent them from sticking with eachother.

    Heat 2 tbsp butter, add minced onion, maida & fry on a low fire.

    Slowly stir in milk & cook till smooth.

    Add grated cheese, stir till it melts, add green peas, mustard powder, salt & pepper.

    Transfer macaroni to a greased casserole.

    Pour cheese sauce over it & toss lightly with a fork to coat macaroni.

    Toss in bread crumbs with 4 tsp melted butter..

    Sprinkle over cheese sauce.
    Bake at 200 deg C for 20 mtes.

    Cut triangles out of toasts & arrange all around the baked casserole.

    Hello Mrs.Chithra,
    I have been spending days online reading ur posts, they are very addicting. i scroll down to see the pic first, the pics for the braided stuffed bread was superb. thanks a ton for posting such great recipes.even if i try a recipe a day i wont be able to keep up to ur speed. i have doubt regarding the baking recipes, is there a diff between the ingredients available in usa and india? does the same recipe work in both places? i tried a cake recipe here in usa and it didn't come out well as it used to be there. why is it so?

    Welcome to this forum.
    You are too sweet in your words to me, thankyou very much !
    Most of my recipes fall under S I everyday cooking & so perhaps you can try a recipe per day, changing the category !
    I do not see any difference in baking in India & USA. In my recipes, a cup measures 200 ml. May be there 250 ml cup is used.
    Make sure you follow the recipe verbatim for baking - that is very imporant.

    Eggless Carrot Cake – a moist, delicious cake.

    Maida - 2 cups

    Curds - 1 cup

    Melted butter - 1 cup

    Powdered sugar - 2 cups

    Grated carrots - 3 cups
    ground cashewnuts - 1 cup

    Baking powder - 2 tsp

    Soda bicarb - 2 tsp

    Cinnamon powder - 1 12 tsp

    Salt - ¼ tsp

    Sift maida, baking powder, soda, cinnamon powder & salt.

    Beat curds & sugar.

    Add this with maida mixture, nuts & carrots.

    Finally add melted butter & bake in a moderate (375F-180C) oven afor 45 mts or till done.

    Sieve icing sugar on top.

    Eggless Brownies - they belong to the super-soft category !

    This I learnt from a Tarla Dalal demonstration.

    Maida - 1 cup

    Cocoa - ¼ cup

    Baking powder - ½ tsp

    Soda bicarb - ½ tsp

    Powdered sugar - ¾ cup

    Milk - 5 tbsp

    Melted butter - 5 tbsp

    Curds - 6 tbsp

    Chopped walnuts - ½ cup

    Vanilla essence - 1 tsp

    Sieve maida, cocoa, soda & baking powder.

    Add other ingredients & mix well with a wooden spoon, making sure there are no lumps

    Pour into a greased & dusted baking tray 8” by 8”

    Bake in a medium oven 400 deg F till done.

    Serve warm with vanilla icecream.

    Brinjal – Potato Bake - Has an Italian touch, though mainly Indian taste !

    Medium size violet round big brinjals - 2 ( or 1 big)

    Medium size potatoes - 4

    Milk - 1 cup (about)

    Red chilli powder - 1 tsp

    Fried gram (pottu kadalai ) - 2 tbsp ( powder fine)

    Cheddar cheese - 3 tbsp

    Oil - 3-4 tbsp

    Tomato ketchup - 4 tbsp

    Butter - 2 tsp

    Salt

    Slice the brinjals, round to ½ cm slices.

    Smear with salt & leave them for 30 mts for them to leave out the water completely.

    Squeeze well & take them

    Dip each slice in the fried gram powder & shallow fry on a hot tava with little oil.

    Repeat for all the slices.

    Boil, peel & mash he potatoes fine.

    Add, red chilli powder, salt & enough milk to make it to thick sauce consistency.

    In a baking dish, spread half the brinjal slices first.

    Over that spread half the potato mixture.

    Repeat again.

    Spread about 4 tbsp tomato ketchup on top.

    Sprinkle grated cheese & dot with butter.

    Bake in a very hot oven till the top browns – takes about 15-20 mts.

    Serve with a green salad or on its own.

    Suji (Rava) Biscuit - taste & flavour are unbeatable !

    Chiroti rava, if available can be used, for this.

    Bombay rava ( suji) - 125 gms

    Maida - 125 gms

    Sugar - 250 gms

    Ghee - 100 gm

    Milk - 50 ml

    Powder the sugar & beat with melted ghee & cold milk.

    Add maida & rava & mix well.

    Roll into tiny balls, flatten & make some designs with knife or cookie cutter.

    Bake at 400 deg F for about 15-20 mts, till golden colour.

    Remove when hot carefully with a palette knife & slowly transfer to a wire mesh to cool.

    Makes about 4 dozs.
