This may seem pretty difficult to make if you do not have patience but tastes great. Therefore, it is better to make it at a barbecue party.

    1. Take one medium sized Brinjal- Heat over gas-stove or red hot coal until soft. Mash it.

    3. Peel off the black charred skin from the brinjal.

    2. Heat oil (preferably mustard oil) in a pan. Fry chopped onions, ginger and garlic paste, chopped green/red chilies, chopped tomatoes and peas (optional). Add the mashed brinjal. Mix thoroughly. Add cumin powder (half teaspoon), Add salt (according to taste). Add a pinch of sugar. Add a beaten egg. Mix again. Add chopped coriander. Add salt if needed.Cover for 1 minute.

    Serve with chappatis or rice.

    Dear Arunarc,

Yes, you are right. It is called Baingan ka Bhartha in the North. The dish that I have blogged is a variation of the Bhartha that you have mentioned.

    Do try it .

    Thanks,
    HAPPY
