Hi Friends, I have bought a prestiage clip on pressure cooker. I tried veg biriyani in that.I used glass lid ant thought biriyani will get perfect. But I failed. Please advice First I pour 2 sppons of ghee and fried the malaksals later onion patota carrot. Later i added ginger garlic paster after 5 min i added 2 sppons curd. Then i added rice and fried 5 min. After 5 min i added water 1:1 1/2 ratio. for 1 cup rice [normal rice] i used 1 1/2 cup water. Stired and kept the glass lid. After 10 min the water disapperead and rice sticking to the cooker. But rice still hard. so i added another 2 glasses of water. Water getting drained but still rice is hard and sticky . Not only with clip on. Every time i am facing same problem. If I used coconut milk alsofacing same problem. Please correct me.
Increase the water ratio to 1:2 to begin with and leave it on slow flame ...and leave it for couple of whistles ....and don’t keep checking .....even if water is all gone , it can continue to cook in steam but flame shoulD not be high ....
Don't fry the rice. It will break. Also soak the rice for half an hour or so and cook it on a low flame. Don't keep tossing the rice. As a poster had already mentioned rice will.still.cook on steam. I cook for exactly 20 minutes in slow flame and off the cooker and wait for the steam to settle. Also basmati works well for biryani type of recipes.
Biriyani to spiced porridge was the first step. The OP had already made progress. All she has to do is to follow one of those youtube recipes and see how she does.
Ok ,Next time i will not fry. Even i use 1:2 ratio some times rice get overcokked or some times rice remains hard and sticking to bottom. If i again pour water and kept whistle it became upma. Whwew i am wrong?
You are essentially making pulav. The right process is wash the rice drain and leave it. Then make a dry gravy with vegetables adding 1 cup water and required salt for entire biryani. Let it half cook that is 1 whistle. Then pour the rice, another 1.5 cup of water but don't mix. Cover and cook on low for 1 whistle. Your biryani will be perfect
for the whole process are you using only 2 spoons of ghee? try adding more oil / ghee .add some before closing the cooker
1: 2 is the ratio for pulav /essentially any mixed rice items. One whistle in medium flame and 7-10 mins in SIM. Pulav / biryani would be tasty with a Lil more ghee or oil. It won't become sticky and will give perfect consistency.. However I haven't tried clip on cooker.
