    I like bihari kababs and chicken bihari boti. I had kept their recipes but missed now :-(

    Hi g3sudha. I am giving you two veg recipes and hope you will like it. I can provide you more very soon.

    Daal Pitha


    INGREDIENTS OF DAL PITHA RECIPE
    1. Channa dal (bengal gram pulses) - 1/2 cup
    2. Green chillies - 2
    3. Black pepper - 20
    4. Ginger - 1 small piece
    5. Cumin - 1 tsp
    6. Rice flour - 2+1/2 cups
    7. Water - 1+1/2 cups(hot)
    8. Salt - 1/2 tsp

    Soak dal for 4 hours.
    For making Dal ka pitha at first make a paste of soaked dal, green chillies, ginger, cumin and black pepper.
    Take out this paste in a bowl and mix salt in it.
    Now in a big bowl add rice flour and knead it with hot water.
    The dough should soft.
    Cover the dough with lid.
    Pitha dough should not cool down.
    Take some amount of dough in your hand and give it a round flat shape and also add some stuffing on the middle of it.
    Close its mouth and give the shape of your desire.
    But always remember to close its mouth properly.
    In this way make all the 8 Dal Pitha.
    Now in a big mouth pan pour water and boil it.
    When water starts boiling add all pithas in it and reduce the flame to low.
    Stir the pithas very - very carefully so that the edges of your spatula do not give cuts to pithas.
    When you add pitha in boiling water pitha goes down and sticks on bottom.
    To make pitha free it is necessary to stir it.
    Let your pithas cook properly on the medium flame.
    When your pitha starts floation then understand that your pitha is cooked and take out each pitha carefully.
    Your Dal Pitha is ready to serve.

    INGREDIENTS OF LITTI
    • For stuffing

    1. Satu - 1/2 cup
    2. Ajwaine(Carom) - 1/4tsp
    3. Mangrela/Kalongi(Nigella seed) - 1/4 tsp
    4. Garlic chopped - 1sp
    5. Ginger - 1/2 tsp
    6. Salt - 1/2 tsp
    7. Lemon juice - 3 tbsp
    8. Oil/achar oil - 2 tsp
    9. Coriander leaves - 1/2 cup(optional)
    10. Water - 1/2 cup

    • For Dough

    1. Aata - 3cups
    2. Water - 1+1/2 cups
    3. Ajwaine(Carom) - 1 pinch
    4. Mangrela(Kalongi,Nigella seed) - a pinch
    5. Ghee - 2tbsp
    6. Besan - 1tbsp(optional)


    In a bowl mix all the ingredients of filling except water ,now pour water and rub it well with your palms, the more you rub the more your stuffing becomes perfect. It should look like bread crumbs.
    For dough mix all the ingredients of dough and knead well. Now divide dough in 6 balls and fill stuffing in it and close the mouth of stuffed balls carefully without any cracks and deep fry on medium flame.
