I love love love chickpeas, but they mostly come in can, which has it's own chemicals, which really defeats the purpose of eating healthy (even after soaking them).

So how to best cook them. Do I boil them? How long do I leave it to simmer.

I just want simple chickpeas to toss with greens I take for office lunch (no chole bhature fancy stuff)

I take chick peas quite often to office .

soak them overnight and pressure cook with some turmeric , ginger garlic paste and salt for 3 whistles . You can increase the whistles if you want them more soft , drain the water , cool it and pack in portion sizes and freeze these . Take one every day to office in
    the form salad

with onion , tomotoes, chillies , salt , coriander . Add veggies if you like
mix it in curd with pepper , salt
mix it veggies and green chutney
use it in stir fry rice
    you can make quick curry
you can also do quinoa salad

it is good source of protein and very filling

I soak chickpeas overnight, then pressure cook for just a few minutes with salt. This way they get well cooked but not mushy. And they taste a lot better than the canned ones.
I use a Presto pressure cooker and it is just 4-5 minutes under pressure. Both the regular and black chickpeas (as well as all kinds of dry beans) are good prepared like this. I usually make salads with chickpeas, or just eat a bowlful with marinara sauce. One batch will last for a week, I wouldn't keep it longer.
