Awesome Veggie Pulav Recipe!!

    Ok reading the thread,please do not think I am posting an awesome recipe:)
    I need an awesome pulav recipe guys..I loveeeee pulav and have tried many varieties but nothing seems mind blowing..today I want to make one..

    anyone can provide me an excellent veggie pulav recipe.;.

    I am not a great cook ..so that wont be good if i guve you a recipe..but i can give u a suggestion ..
    I bought mdh pulaov masala..it is awesome and it will helo u making hood pulav

    Ok.. here comes My version of veggie Pulav ;-) .. U have to identify ingredients in steps only..

    Basmati rice - 1.5 bowl .. rinse n keep it aside

    1. In Cooker , add 2 tbspn Oil , once its hot.. Add bay leaf , cumin , 7-8 black pepper , 6 - 7 Cloves , few Cardamoms , Daal chini ..

    2. Add Chopped onion .. Once onion is translucent , add veggies ( Seasonal like Carrot , beans , Peas, Corns ) whatever u like.

    3. Once veggies are lightly cooked ( may be in 2 mins ) add Ginger+ garlic + Chillies Paste

    4. Add Rice in that . Add some chopped Coriander . also add half cut lemon .. dont remove juice.. just add as it is. Also add salt as per taste . n required quantity of water..

    5.now add biryani powder /masala if u have or u can prepare one

    6. Now put the lid n cook it on slow flame..

    Hi Anika,

    I will share my recipe with you! Infact the veggie pulav is one dish which I can safely say I cook well. This recipe of mine has lots of fans in my house....from my kids to my grandfather!

    Well here it goes! I hope you enjoy it as much as they did!

    Ingredients:

    Basmathi rice - 1.5 cups
    Chopped mixed veggies - carrots, beans, potatoes, peas
    (sometimes, I substitute the veggies with just peas 3/4th cup peas for 1 cup rice quantity, or I recently added just corn to make corn pulav...so use your imagination)
    Onions - 1 chopped finely
    greenchillies - 2 (as per your spice level)
    Ginger garlic paste - 1 tbsp.
    Ghee/ oil: 4 Tbsp
    Mint leaves - few sprigs chopped nicely
    Coriander leaves - few sprigs chopped nicely
    Coconut milk - 1.5 cups
    water - 1.5 cups

    Whole spices:
    Cardamom - 1
    Cloves - 4
    Cinnamon - 1 small stick
    Bay leaf - 1
    Marathi moggu - 1
    Star anise - 1
    Jeera - 1 tsp
    Saunf - 1 tsp
    Cashew nuts - optional

    Procedure:

    1) Heat the cooker
    2) Add oil/ ghee
    3) Add the entire whole spices at one go
    4) sauté until they are fragrant
    5) add onions n sauté until they are light brown in colour
    6) add ginger garlic paste n chillies and sauté for a min
    7) add in the veggies now and saute
    8) add the mint and coriander leaves and sauté
    9) add salt just for the veggies at this point
    10) add rice to this
    11) for every cup of rice, you add two cups of water...here I substitute one cup of water with one cup of coconut milk......
    1.5 cups of rice = 1.5 cups of coconut milk + 1.5 cups of water
    12) taste and adjust salt at this point
    13) add a spoon of oil/ ghee
    14) close the lid and cook until four whistles and switch it off
    15) once done, when you open, add few more sprigs of coriander leaves

    Eat it hot with a spicy curry or just raita!
