    Dear Subha,
    Please follow my puri recipe verbatim.
    Make a tight dough.
    Fry immediately.
    Keep 2-3 plates lined with kitchen tissues ready.
    Spread out & do not stack one over the other.
    Change from one plate to the other so that whatever oil is there, gets absorbed by the tissues.

    I am glad and surprised with your quickest replies time and again.

    Oh! you are resident of Mylapore !!!!!!!!. I was in Mylapore only and also had the privilege to witness "Nagha Vaghavanam" and "Rishaba Vaghavanam" during the Panguni Festival at Sri Kapaleeswara Temple last month.

    The festival took me back to my old fond nostalgic memories, when we as children accompanied our grand parents daily to the temple sitting and playing in the cool sand. Now they have concreted the whole area. My grand mother will never feel satisfied despite her looooooooong darshan especially on the third day of Adhikara Nandhi, Rishaba Vaghanam, Car festival and Arubathy Moovar. She enjoyed all these more than anything. She passed away 27 years ago.

    Anyways, thanks for your time and suggestions to interact in the forum more often.

    You have to believe me when I say that though having lived in Mylapore for 40 + yrs, I have never seen M'pore festival!:hide:
    V will not allow me to go, saying that it is tooooooooooo crowded. Well, don't we compromise on many many issues? - this was one such! No regrets, anyway. TV shows it all for people like me!

    Hello Chithra ma'm,

    Am cooking rice in rice-cooker.....after it is cooked little amount of rice sticks at the bottom of the cooker & turns into red colour - fried kind of thing...How to avoid this ? IF i pour more water the rice becomes like a kanji....Pl suggest me an idea to avid this...

    Rice cooker, if new, takes some time to "settle down" - in tamil, we say pazakaradu !
    Try adding less water. Do not allow the "keep warm" mode to get switched on. Switch off as soon as the rice is "almost done". The residual cooking gets over in that heat itself.
    Pulao comes out better because the fat in it helps to prevent sticking at the bottom.

    Dear Chithra Mam,

    I would like to ask you the receipe for "Creamy Spinach"....... here they are selling in the restaurants and the taste is just amazing...... i will be glad to know about this from you.

    It looks like they add the cream and spinach and mash it , it goes into the mouth smoothly.Can i follow the way of making "Au gratin" more or less to make this.Or can i buy the fresh cream from the shops and mix with spinach?

    Pls advice me ......
