Spongy idlis are great and those hard idlies are tough to eat. I love idli with podi too.
My hubby cannot eat with out coconut chutney for anything and i love onion chutney.. so I end up making onion chutney in bulk, freeze it and use when necessary

You are right foods I shyed away in childhood are my fovorite too. I remeber my mom making garlic kuzhambu and i ran away from lunch. Now garlic kuzhambu is often made at home. My mom is happy about the sudden fondness and loves my experiments with food
our breakfast was idli too

My mom used to mention about the manual grinding she did in childhood and how happy she was when we got the wet grinder back in 80's
