A Fussy Child's Lunchbox Ideas

    Yellow Potato curry sandwich

    (I haven't used peas here)

    It is very quick n easy to make. If we use uncooked peas it will take a bit more time. Using precooked potatoes and/or peas saves a lot of time and you can prepare this curry in a jiffy when a sudden guest visits home

    The toast or a sandwich made from this curry tastes yummy. Your kid will suddenly turn a good eater!

    Time: 10-20 minutes

    Serves 2-3


    Ingredients: 2 medium sized boiled potatoes- peeled and partly mashed, 1 cup of boiled green peas (optional), 2 tsp chopped coriander leaves, salt and lemon juice to taste, 1/4 tsp turmeric powder.

    Tempering: 2 tsp oil, ½ tsp mustard seeds, ½ tsp cumin seeds, a pinch of asafoetida (hing), 5-6 curry leaves, 3-4 finely cut green chillies,

    Bread


    Method

    1. Heat oil in a pan & crackle mustard seeds & cumin seeds.
    2. Add asafoetida, turmeric powder, green chillies and curry leaves and fry.
    3. Add boiled green peas, potatoes and salt to taste. Mix well, cover & cook for about 3-4 minutes.
    4. There is no need to add water.
    5. Take it off fire & add lemon juice.
    6. Garnish with coriander leaves.
    7. Make a toast with the above filling, apply some salted butter on the toast and serve with ketchup or green chutney.

    Potato-Tomato Curry Sandwich

    This curry can be prepared in a jiffy. It is an excellent accompaniment for chapatis, roti, kulcha & naan. This can also be used as a filling for bread toasts or sandwiches. Tastewise it is sour & spicy

    Time: 5-6 mins

    Serves 2


    Ingredients: 1 big boiled, peeled & diced potato. 1-2 medium-sized tomatoes (sour tomatoes give a better taste), 2 tsp finely chopped coriander leaves, ¼ tsp turmeric powder, red chilli powder & salt to taste


    Tempering: 2 tsp oil, ¼ tsp cumin seeds, a pinch of asafoetida (Hing)


    Bread


    Method

    1. Heat oil in a pan & crackle cumin seeds.

    2. Add asafoetida, tomatoes & fry for 2 minutes.

    3. Add salt, turmeric powder and potatoes, mix well and cook for another 2 minutes.

    4. Add chilli powder & mix.

    5. Garnish with coriander leaves.

    6. The curry is ready.

    7. Mash the curry a little to make the sandwich or toast.

    8. Make toast, apply some salted butter on the toast and serve with ketchup or green chutney

    This reminds me of the Mumbai roadside sandwichwallas. How I used to long for a bite! But we weren't allowed to eat on the streets. And now your sandwiches are also "look and drool but don't touch or taste." :crybaby2:

    Mumbai and it's streetfood! (drool!) Tastewise, I think the roadside foodstuffs are far tastier than the restaurant ones. We see the roadside situations and think of the missing hygiene but even in some of the restaurants, kitchens are highly unhygienic! In general, the concept of hygiene is still unpopular and alien in India!:eek:
