Yellow Potato curry sandwich (I haven't used peas here) It is very quick n easy to make. If we use uncooked peas it will take a bit more time. Using precooked potatoes and/or peas saves a lot of time and you can prepare this curry in a jiffy when a sudden guest visits home The toast or a sandwich made from this curry tastes yummy. Your kid will suddenly turn a good eater! Time: 10-20 minutes Serves 2-3 Ingredients: 2 medium sized boiled potatoes- peeled and partly mashed, 1 cup of boiled green peas (optional), 2 tsp chopped coriander leaves, salt and lemon juice to taste, 1/4 tsp turmeric powder. Tempering: 2 tsp oil, ½ tsp mustard seeds, ½ tsp cumin seeds, a pinch of asafoetida (hing), 5-6 curry leaves, 3-4 finely cut green chillies, Bread Method Heat oil in a pan & crackle mustard seeds & cumin seeds. Add asafoetida, turmeric powder, green chillies and curry leaves and fry. Add boiled green peas, potatoes and salt to taste. Mix well, cover & cook for about 3-4 minutes. There is no need to add water. Take it off fire & add lemon juice. Garnish with coriander leaves. Make a toast with the above filling, apply some salted butter on the toast and serve with ketchup or green chutney.
