    Dear Chithra Mam,

I was referring to your recipe of Idli batter. I do not have Grinder here. Just the food processor, blender. I understand from your recipe, I should decrease rice by one cup as I am going to use mixie. But is the rest of the process same? I mean, should I also soak, grind Urad Dal and Rice together?

    Please help me out. :bowdown

    Love,
    Sowmya

    Question about pavakkai!

    Hello Mrs. C

Bought pavakkai this time. Can you suggest me any way of making it less bitter. I saw your pavakkai fry recipe. Can i omit onion in that.

    Thanks in advance.

    Re: Question about pavakkai!

To make it less bitter, for all kuzambus with it, fry on a low fire for 10 mts & then proceed. Yes, you can omit onion.
    Love,
    Chithra.

Dear Chithra mam, There was an internet outage for sometime and I missed your reply for Idly batter. :spin So I went ahead and grounded them separately. I followed the FRIDGE recipe for Urad dal and it fluffied up soooooo well that never have I seen my Urad Dal fluffying up like that. Idly came out really good. After a loooong looong time having nice idlies here in US :) I am going to try Idly once again next weekend, will soak, grind the ingredients together. And will let you know my FB.

Vish (He is from Andhra Pradesh, ) was asking me a doubt, which I am asking u back :) He says in AP, he has seen idlies so porous outside and not smooth like what we have in TN, though he likes both.... In chennai, except for some rare times in Hotel, I too havent spotted much of porous idlies. Little curious to know what gives that porousness to the idlies? Is there some other process or some other ingredients? Its just a qsn out of curiousness, I hate such idlies :rotfl

    Love,
    Sowmya

Sowms, try once the idli recipe I have given (mixi method) with rice kurunai. That is how (I am told) idlis are generally made in Andhra & here also, in weddings. That gives a totally "porous softeness" unlike our "jasmine softness"!!
    Love,
    Chithra.
