Simple Veg n Non Veg Recipes

    Hi All,

Would like to share a simple chicken recipe:

    Vendayam Chicken. (Dry)

    Ingredients:
Chicken : 1/2 kg (with bone or boneless) cleaned and washed
    Vendayam(fenugreek): 1/2 teaspoon
    Redchiili powder: 2 teaspoon
    Turmeric: 1/2 teaspoon
    Curry leaves : 2 sticks.
    Cloves: 4 nos
    Oil: 2-3 tablespoons
    Salt to taste

    Preparation:

Heat a thick bottom kadai, heat oil and add cloves, vendayam (dont let it fry too much) add the chicken and fry for 5 min, add chilly powder turmeric and curry leaves, mix the chicken nicely add salt mix nicely, add little water and cover the kadai (low the flame) dont add too much water, it has to be cooked with less water and on low flame, keep tossing every 5 min untill the chicken is fully cooked and dry.

It makes an excellent side dish alongwith rasam/sambar rice..

Try n let me know the feedback :)

Re: Simple Veg n Non Veg Recipes

    A Very Nice recipe Aafri,

I have done this but with Methi leaves.
You can add methi leaves instead of methi seeds. Sorry, that is, vendhaya keerai instead of vendhayam.
Just cook the chicken the way you do and add chopped vendhaya keerai .
Simmer and cover till it gets cooked.
Remove the lid and dry the masala completely. See that there is very little water when you add keerai or it might turn bitter.
See if you like this variety.

    hi aafri and latha,

me too have tried with methi leaves. once chicken is cooked 3/4th i would add methi leaves to it. As she suggested add less water to avoid bitterness. Let it dry well. Will also saute onions and crushed garlic before adding chicken.
