Dark Green Leafy Veggies Recipes.

    Hello,

    Trying to incorporate more dark green leafy veggies in my diet now via curries. I feel this will also help me in my weight loss. Want to reduce the starchy vegetables as much as possible.

    Anyways, while growing up I never liked green leafy veggies and wasn't as common at my home. Only green leafy vegetables I have had so far in curries is:

    - Amaranth (difficult to find in US, let me know if you know where can I buy them. Small Indian grocery stores don't carry it.. Only place I found it was at a big Indian grocery store which is an hour away from my place.)
    - Palak in Palak Paneer or Aloo palak.
    - Methi in Aloo Methi or Besan Methi

    Please share ideas of more green leafy veggies curry.

    Simple ones I do : start with tadka , onion, tomato, garlic and washed green leaves. Cook Till the leaves and tomato get soft.
    Mixed greens or single type , Tastes good.

    I have found amaranth in Asian markets but the leaves are bigger and tougher than the ones we get in India so I don’t buy them.
    I like collard greens. They need a long time to cook but they are very tasty. I cook them using the Kashmiri “haak” recipe.

    Palak dal, amranthus tomato dal, amarsnthus moong dal fry,palak soup, methi chicken curry, methi aloo curry, palak roti, Swiss chard tadka fry, palak or amaranthus besan+ lobia cheela, moong dal palak pakore/vada, keerai vada, methi tepla, hara bara veg cutlets/ kababs, hara bara paneer or chicken tikka made with mixed greens( methi, palak, mint, coriander leaves), palak pakora.

    I love kale poriyal. It tastes like Drumstick leaves poriyal without much hard work of picking the tiny Drumstick leaves.
    Recipe:
    Cut kale leaves into small pieces. vagaar then add onion fry it then add kale cook it. Roast the peanuts (2tbs) red chillies crush it with 2 cloves garlic.The powder should be coarse and add it in the cooked kale. Voila you get yummy healthy side dish ready for sambar rice, chapatis or eat it as it is.
