I don’t know the recipe used in weddings.
I have a very simple recipe for brinjal gotsu:
Pressure cook on high for 14 minutes in instant pot cooker: 2 medium brinjal cut in small cubes, 1 small tomato, 3 cut green chilies, 1.5 tablespoons of moong dhal with 1.5 cup of water. Here moong dhal is just a thickening agent so no need to use a lot.
Heat Kadai with oil and temper with mustard seeds. When it crackles add cumin seeds, curry leaves and chopped onion. Fry for a few minutes and then add water, 1 tsp of tamarind paste, turmeric powder, coriander powder, and red chilies powder. You can add sambar powder in place of these spice powders if you want. My mom does this and it tastes heavenly especially because she uses home made sambar powder. Since I have store brought powder out really doesn’t make big difference either way. Once the raw smell goes away, hand mash the contents from instant pot cooker and add it. Make sure it is mashed well. Add it to kadai, mix well and switch off after a few minutes. Garnish with coriander leaves. Optionally you can add a tsp of jaggery powder at the end. I do this since I make it very spicy. It gives a nice touch.
I made this even this morning for idly. It goes well with idly, Dosa too. I usually make it tangy and spicy since we like it like that only.

I don't know if this is weakness or what.. I wish a homemade til chikki showed up in my kitchen by magic tomorrow. Donuts not cutting it any more.

The recipe in the Hebbar's Kitchen page is so informal and like a friend talking, it makes me even more nostalgic.

    Excerpts from the recipe:
    • check the consistency, by dropping syrup into a bowl of water, it should form hard ball and cut with a snap sound. else boil for another minute and check.
    • ..
    • be quick else the mixture turns hard and will be difficult to set.
    • ..
    • get together forming a block, be careful as the mixture will be very hot.
    • now using a rolling pin roll the slightly thick block.

I came here to tell exactly the same thing !! Til chikki doesnt even enter my kitchen - the whole pack finishes before it reaches the dining area!!

When DH realised this, he started buying 2 packets so that he could have at least 1!! :confundio1:

High hopes... both packets would finish before he remembers to eat it... So he started keeping it in his office laptop bag :innocent:

Other items are malai (cream layer on boiled milk) and popcorn...

Ok.. going off to make some buttery popcorn for myself !!

    Keep smiling
