:hello:But local ( chennai - India) cast iron thava or pan, after few uses for making chappathi would turn unfit for making Dosa.

Chappathi maker - electric is good only if eaten the moment chappathi is taken out of the equipment. Moreover the machine coil is of poor life . With in few uses of it, the machine within warranty period malfunctions or not function at all. Coil replacement a costly affair. I think use of chappathi maker is out of date.

For best cast iron pan in various sizes BHATAT STORES at Vadapalani on the way to famous Murugan Temple chennai considered best. It is all made in Calcutta then Kolkatta now.

    Thanks and Regards.

God- those days in slow firewood or charcoal oven - mom made chappathis really soft and tasty. Could be preserved for long to eat in instalments.

Assuming you are in US currently.
You can buy Lodge cast iron pan from Amazon. I actually bought it for making dosas but sometimes I use it for chapati too.

I got a chapati pan from India which is iron pan. Most of the times I use this but if I have to season Lodge pan then I use it for chapatis especially helpful when the pan is new.

I never use non stick these days.don’t have that much good experience with hard anodised tawas either, as it wears off and difficult to clean and maintain...I use separate Iron Tawas for Dosa and Chapathis..the Dosa Tawa is pretty heavy, Chapathi Tawa also is sturdy but not as heavy as The Dosa Tawa..both are local brands, not cast iron and purchased from local stores at a reasonable price..
The roti Tawa is really good, it heats up quickly and Phulkas are coming really well..Dosas too are really crisp and tasty and well roasted..it’s healthy and I do not have to worry about the non stick coating wearing off like I used to do earlier...

According to science cast iron on contact with water should get rusted. We mean only steel pan though we say cast iron pan.

No. Do you mean stainless steel?
We use cast iron griddle only.
After washing, they should be dried with a towel. Apply a thin layer of oil. No rust.
I use SS skillets for cooking since cast iron skillets are too heavy to handle.
