As long as the fridge is working well it is fine. I often save leftover peeled onions for a few days if I have extra. Use a separate airtight container. Make sure the onion does not smell bad or have fungus before using.

Thanks @malarun .. Your tips are very helpful. I know this is very old thread, but can you please suggest few lunch recipes without rice/ dosa/idli, specifically the ones we can take to office? We are limiting our rice intake on a daily basis. I prefer to cook fresh so I can dedicate 30-45 mins every morning for lunch ( with some prep a night before). Any suggestions will be very helpful.

    Thanks!

Parathas are great for lunchboxes..mix and match aloo Gobi paneer radish etc. You can prep the stuffing and dough the night before and it's a breeze. You can also make dosa batter with broken wheat and urad dal in the ratio 2:1:0.5 (wheat to urad dal to poha) ..ferment as usual and make dosas and idlis..that way you avoid rice.
