    Sandwich chutney
    It is amazing that a simple and humble combination of few simple materials can transform a boring bread into a delicious, nutritious snack! Like most food items everyone has their own version of sandwich chutney with little changes here and there.


    This is good to make chutney sandwich, potato sandwich, veg. sandwich, tricolour sandwich etc. These sandwiches can also be toasted also. But for lunchboxes, toasts are not well suited as they turn leathery. Toasts are good for breakfasts or as evening snacks.

    You may use any kind of bread- white, brown or multigrain.


    Ingredients


    A bunch of coriander leaves and /or mint leaves, ½ inch long piece of ginger, 1-2 flakes of garlic, 6-7 green chillies, salt to taste, ½ tsp lemon juice.1 slice of bread or trimmed edges of 2-3 bread slices. Little water

    Method

    Just put everything into the grinder jar and grind into a smooth paste.


    Notes

    1. I have not heard of anyone using a bread slice in the sandwich chutney. I used it to give a smooth texture. This gives a certain cohesiveness to the chutney and helps to spread chutney easily. You may add dry bread crumbs too.

    2. This sandwich chutney can be stored for over a week in the refrigerator.

    Plain Sandwich


    Trim the edges of the bread slices. Spread butter and chutney. Sprinkle a bit of sandwich masala or chaat masala. Close with another bread slice. Cut into any shape you choose.

    Boiled potato sandwich

    Toasted sandwich*

    This is a true winner. Boil, cool and store potatoes in the fridge. These potatoes are safe for a couple of days.


    Ingredients


    Boiled, peeled and sliced potatoes, sandwich chutney, chaat masala or sandwich masala, ketchup, butter, bread slices.


    Method

    1. Trim the edges of bread slices.
    2. Butter the first slice of bread on one side
    3. Apply sandwich chutney over it.
    4. Place 2-3 slices of boiled potato.
    5. Sprinkle sandwich masala.
    6. Apply ketchup on one face of the second slice of bread. Place it on the prepared sandwich in such a way that ketchup touches the potato slices.
    7. Slightly press the sandwich and cut into any shape you fancy.

    Sometimes I prepare chutney with palak and prepare the sandwich as usual.

    Tri-colour sandwich

    A few years back when my son (in primary school) was busy mugging up a speech on the occasion of our Independence Day, I thought of this idea to bring out the spirit of that special day. It is damn easy to make it. See if your child also likes it!


    Ingredients

    Bread slices, butter, sandwich chutney, tomato ketchup


    Method

    1. Trim the edges of bread slices.
    2. Butter one side of the first bread slice.
    3. Apply sandwich chutney over it.
    4. Cover with the second slice of bread.
    5. Apply ketchup over the second slice.
    6. Cover with the third slice.
    7. Cut into the desired shape.
    8. Tri-colour sandwich is ready to eat.

    Vegetable sandwich

    Who wouldn’t like this tasty snack? It is excellent for breakfast/ evening snack/or even lunch boxes. The only my time my son heartily consumes salads is when I present it to him in this form.


    Time: 30 minutes


    Ingredients


    Bread slices, tomatoes- finely sliced, cucumber- finely sliced, boiled, peeled potato-finely sliced, boiled peeled beet-finely sliced, onions-finely sliced, sandwich chutney, chaat masala or sandwich masala, salt, tomato ketchup

    Other vegetables that can be introduced in this sandwich are boiled and sliced beets, onion, cabbage, lettuce etc.

    Method


    1. Trim the edges of bread slices.

    2. Apply a thin layer of butter followed by sandwich chutney on one side of the bread slice.

    3. Place vegetable slices of your choice on the chutney.

    4. Sprinkle sandwich masala or plain salt over the vegetables.

    5. Take the second slice, apply butter followed by green sandwich chutney.

    6. Place this slice over the vegetables( chutney touching the vegetables).

    7. Press lightly cut into 2 or 4 triangles.


    Note

    1. If your vegetable slices are thick and too many, managing sandwich becomes tough.
    2. Limit your vegetables. I have used thin slices of potato, cucumber and tomato.
    3. For a variation for kids, replace chutney in the top slice with tomato ketchup. This way you can remove tomato slices and introduce any other vegetable. Children love this version. (It seems more lycopene is available in ketchup than in the tomatoes!)
    4. The vegetables may be pre-cut and stored in the refrigerator to save time in the morning.

    Carrot playa (Carrot Curry) Sandwich

    Carrot curry is very flavourful & tasty. Iyengar bakery near our home at Bangalore used to make this curry and serve it over toasted bread slice. As kids, we would drool over them.

    These days I make it as an accompaniment to chapati also. I also make bread toast with it. It is good for breakfast or as a tea-time snack. You can sandwich this curry between bread slices and send it as a sandwich in the lunchbox. It is more suited for an older kid.


    Ingredients: 200 g carrots-washed, peeled & grated, 2 medium sized onions- cut into small pieces, 2 medium-sized tomatoes- cut into pieces, 4-5 green chillies, 1 tbsp chopped coriander leaves, salt to taste, ½ tsp turmeric powder.


    tempering: 1 ½ tbsp oil, ½ tsp mustard seeds, ½ tsp cumin seeds,8-10 curry leaves.


    Bread


    Method


    1. Heat oil in a pan. Crackle mustard & cumin seeds.
    2. Add green chillies, turmeric powder, finely chopped onions & curry leaves, Stir well, cover and let it fry over a low flame.
    3. Mix in between to avoid burning of onions.
    4. After about 4-5 minutes add carrots and tomatoes. Mix, cover & cook.
    5. Sprinkle water in between to facilitate the cooking of carrots.
    6. Add salt, mix well, cover & cook.
    7. When the water evaporates, add some coriander leaves & mix well.
    8. Make a toast, apply some salted butter on the toast and serve with ketchup or green chutney
    Note: If you wish you may add garam masala and chilli powder in place of green chillies.

    To make the toast

    1. Place the curry between the slices.
    2. Preheat the toaster; smear little butter on the toaster plate.
    3. Place the sandwich. Grease the top of the sandwich.
    4. Close the lid of the toaster. Toast till the sandwiches are lightly browned.
