We used canola oil for long time, but now we came to know that canola oil is not from natural seeds. For deep frying peanut oil is good and for other tempering we use sesame oil which is the best. Dosas and chappatis taste better with sesame oil. And I use coconut oil also once in a while. For salads we use olive oil. We won`t use corn oil and vegetable oil, I dont like the smell.

We use olive oil in all Indian cooking. My MIL insisted it smelled funny, but my DH and I don't see any difference. For deep fry we use gingely oil. For sweet deep fry we use ghee.

I use olive oil from Costco for all cooking. I buy sunflower oil from Indian store or any shop for frying. I use gingerly oil for puli kulambu n puliyodare. Sometimes I use coconut oil from costco.

Sesame Oil is very good for everyday cooking . Can also use coconut oil alternatively
Kadalai (Peanut/ground nut oil) for deep frying
For sweets it is Ghee .

Olive oil is not suitable Indian cooking

I alternate oils as I read somewhere that alternating is good hence, I use peanut oil, vegetable oil, canola.
Olive oil only for Italian food and salads, as we cannot and should not heat olive oil.

I use peanut oil for deep frying or stir frying, sunflower oil for general purpose cooking and extra virgin olive oil for salads. Don't buy huge containers unless you will use it up quickly. It's better to buy smaller bottles so they stay fresh.

I use Olive Oil for all my cooking other than deep frying. The oil is from costco, not EVOO
It works for all recipes you said

For deep frying, I get ground nut oil- after asking guests about allergy

Or else, I get Sunflower, Canola oil for deep frying

Desi sweets are better with ghee, but I don't make any
