    Here is the traditional Marathi chivda recipe along with Poha. Try it out this summer!


    Oats and Poha Chivda
    Ingredients
    1 cup poha (thin beaten rice)
    1 cup Oats
    2-3 tbsp roasted peanuts
    2-3 tbsp daliya dal
    4-5 green chillies slit in half
    5-6 curry leaves (chopped)
    1 tsp asafoetida
    1 1/2 tbsp coriander powder
    1 1/2 tbsp cumin powder
    1 tbsp caster sugar
    Salt to taste
    2 tbsp refined oil

    Method
    Dry roast the poha till they are crispy, but do not let them change colour. A good way to know if they are done is that, the sides of the poha start to curl up a bit. Also when you hold the flakes in between your fingers and press it a bit, they should easily crumble. That means your poha is roasted. This is a very important step as this will determine the texture and crispness of the chivda. Next roast oats till they slightly change color. Do not stir a lot because they will easily get powdered.

    Heat oil in a kadai and add the daliya dal and peanuts. Roast them for 2-3 minutes till the daliya dal starts to turn reddish. Next add the curry leaves and chillies. Fry them till the curry leaves and chillies are crispy. Then add the asafoetida, fry for a few seconds. After this goes in the coriander and cumin powder, which also you fry quickly for a few seconds till you get a nice aroma of the spices. Now add in the poha, oats, sugar and salt. Mix till the poha is well coated with the spices. Cool and store in an airtight container.[​IMG]

    Oats Nutty Porridge

    For TOPPING:
    ½ cup or Approximately (45g) Oats
    ½ cup chopped mixed nuts
    2 tsp honey

    For PORRIDGE:
    1 cup Oats
    ½ cup chopped dried fruit
    2½ cups (625mL) water

    The Method:

    1. combine oats, nuts and honey; place on a baking tray. place under a preheated grill and cook on medium heat until crispy and lightly golden, stirring occasionally.
    2. to make porridge, combine oats, dried fruit and water in a saucepan over high heat; bring to the boil, stirring constantly; reduce heat and simmer 5 minute or until oats are thick and creamy.
    3. divide between serving bowls, top with nutty topping and serve immediately drizzled with extra honey if desired.

    This is my Favourite one

    Chocolate Oat Bars

    Ingredients required are:
    2 cups brown sugar
    250g unsalted butter, melted
    2 eggs, lightly beaten
    2 tsp vanilla essence
    2 cups (300g) self raising flour
    3 cups Oats
    30g butter
    300g Dark Chocolate, chopped
    395g Sweetened Condensed Milk
    1 cup chopped walnuts
    2 tsp vanilla essence

    METHOD

    1. preheat oven to 180°c/160°c fan forced. grease and line two 18 x 28cm lamington pans with baking paper. in a medium bowl combine sugar, butter, eggs and vanilla. stir in sifted flour and oats and mix well. divide mixture in half, press firmly into pans.
    2. combine dark chocolate, sweetened condensed milk and extra butter in a medium saucepan. stir over low heat until chocolate is melted, then remove from heat and stir in walnuts and extra vanilla.
    3. spread chocolate mixture evenly over bases. bake for 30 minutes or until cooked. cut into bars.

    Peanut Butter Oats Laddu


    Ingredients required are:
    2 tablespoons unsalted butter 2/3 cup creamy natural peanut butter
    1/4 cup confectioners' sugar (Powdered sugar)
    3 tablespoons honey
    1 teaspoon vanilla extract
    1 1/2 cups Rice
    1 cup oats
    1/4 cup raisins
    1/4 cup mini chocolate chips
    1/4 cup finely chopped lightly salted dry-roasted peanuts


    Method is :-

    Melt butter in a medium saucepan over medium heat. Remove pan from heat and stir in peanut butter, confectioners' sugar, honey and vanilla. Stir in Rice and oats and allow mixture to cool.
    Stir in raisins and chocolate chips. Form mixture into 1-inch balls, then roll each ball in chopped peanuts, pressing to coat. Store in refrigerator.

    Method
    1. Take some oil in a hot pan and add cumin seeds, onions, salt, green chilies, turmeric, carrot, beans, tomatoes and cook for a while.
    2. Now add boiled masoor dal and mix it well.
    3. Now add water, lemon juice, oats, mint leaves and mix thoroughly for 2-3 min.
    4. Switch off the flame and enjoy hot.
