I have tried cooking Idli many times, but it never turns out normal. Sometimes it is very watery not much stiff and soft. once it became brown :bonk. My mom used to prepare idlis and uttampams very nice at home. I have learnt rava uattampam very well but not yet idli.

I read a lot of recipes, but since there is no one here to tell me where I am going wrong, I would like to know first hand tips to avoid for preparing idli.

I would also appreciate if you ladies tell me is there any way to prepare Idlis without urad dal. I had brought ready to prepare rava idli pack but it also did not turn out well.:hide: I am craving for idli. Please help me.

I have idli stand . I put that in the pressure cooker and give 4-5 whistles. A few days back the cooker cover blew off while preparing idlis was it because water was less in it ?

I dont know if there is a way to make idly without urad dal OP. I think they are called rice cakes if you are making without urad dal and not idly.

As for me, below tips is what I follow:

1 cup idly rice to 1/4 cup urad dal. Soak separately and grind them fine when they are soaked over night. Let it ferment. make sure it rises. Else, idly will not come out well.

You do not use a weight for the pressure cooker. maybe thats why you are not getting it right. The idea is to steam the batter, not cook. If you use weight on the cooker and wait for 3 or 4 whistles, you are basically cooking them. next time, dont put weight. I time it for 14 minutes and it comes out well.

    Thank you Rakhi !
But then shall I just keep the idli stand in the cooker without covering it? because I do not have the actual idli steaming vessel which has a cover. So I use pressure cooker.

You have to cover it with pressure Cooker lid. You just don't use the weight. As for the water, I generally use hot water at the bottom of the cooker. When you place the cooker stand, the water should not touch the stand.

Just make sure the batter ferments. Here in Canada, it's hard during winters. Good luck dear!!

    Thanks Rakhii !
Yes, here in US too it is hard to ferment in winters. If I have to prepare for the weekend I need to start by wed or Thursday.

You can keep it in the oven with lights on. That helps
