Hi sisters... I like to share u the recipes which is told by my sweet mom... It was very helpful when i got married and stayed alone with my hubby. i used to call her and add some recipes too.. Those may be very simple and also many of us know ... it may be useful for beginners.
SAMBARserves 2 to 3 Ingredients: Vegetables - 1 cup Small onion - 10 Tomato- 2 Tamarind juice Sambar powder Turmeric powder Asafoetida Fenugreek Oil Salt. Curry and coriander leaves. Mustard seeds and urad dal Tur dal Method: Oil +mustard seeds + urad dal +curry leaves + small onion(if ladies finger is veg add to this) FRY. Add tomatoes and vegetables. mix well. add water and allow to cook. Tamarind juice + salt +turmeric pdr +sambar pdr & allow to boil.. Add boiled and mashed Tur dal to the mix.. add coriander leaves . allow to boil. Asafoetida and Fenugreek fried in oil to be added to sambar.
RASAM Ingredients: Black pepper. 2 spoons Jeera 1 spoon Garlic. 4 Tamarind juice. Tomato -1/head Curry and coriander leaves. Red chilly. 2 Salt. Turmeric powder oil Mustard seeds. fenugreek asafoetida. Sugar. (little) Method: Black pepper + jeera+garlic+ grind. Oil + mustard +asafoetida +fenugreek +cury leaves + Red chilly , tomato( till it cook wee) ,Turmeric pdr.. mix.. Add the grinded powder and tamarind juice to the mix. Add water,salt,sugar. Add coriander leaves. Don’t allow to boil.
KULAMBU Ingredients: Vegetables. Or Fish Or egg. Small onions 10-15 Garlic.10 Coconut.1/2 cup Curry leaves. Kulambu pdr Oil.(gingelly). Mustard seeds. fenugreek asafoetida. urad dal Tamarind juice. Turmeric pdr. Salt. Method: Coconut + small onion +curry leaves + garlic FRY TILL IT GET GOLDEN BROWN. And grind it.( if oma kulambu.. fry omam and grind with coconut) Oil + mustard + urad dal+ curry leaves +asafo +vendayam + vegetables. Fry . Add tamarind juice. And salt, turmeric powder and boil. Add paste and water,, add boil well.. Note: Dont add more coconut to get thick kulambu.. because the kulambu will get more thicker when it cools.. so add small onions more when grinding or coriander powder with kulambu powder. If fish( salt and turmeric soaked) add it at last.. ie after adding paste and water. Egg- after adding paste and water..
SODHI Ingredients: Coconut (small 1) Carrot 1/4 cup Beans 1/4 cup Potato 1/4 cup Cauli flower chopped 1/4 cup Butter beans. 1/4 cup Peas 1/4 cup Drumstick 1/4 cup Coconut oil Big onion. 1/4 cup Lemon 1 Ginger Garlic Jeera Green chilly. Salt. Siru parupu.. cooked and smashed. Method: Coconut oil + green chilly + gin.gar paste.. FRY. prepare coconut milk. keep seperately the 1st,2nd time of milk Add onion and all veggies.. fry well and add 2nd milk After cooked add siru parupu mash add water to make consistency of soup. Allow to boil. turn off the stove and remove the pan.. add the 1st milk fry Ghee + jeera ... add to sodhiiiiiiiiii.
GINGER PACHADI (side dish for sodhi)Ingredients: Coconut Ginger 50 gm Garlic 5 number Small Onion 10 Pepper ¼ spoon Jeera ¼ spoon. Asafoetida . Curry leaves Coriander seed Red chilly 2 Salt Vellam Tamarind 1 Turmeric powder. Mustard seeds Urad dal Gingelly oil Method: Oil + ginger + garlic, pepper, jeera + red chilly + coriander seeds+curry leaves.. take it. Fry coconut 3 spoons in an empy pan grind all these. and tamarind and salt to paste. Oil + mustard seeds, urad dal curry leaves , asafoetida,onion.. fryyyyyy. And add the paste and turmeric powder.. allow to boil .. oil sperated consistency..add vellam powdr
