    Klim Burfee Recipe

    Hi Ladies,

    Here's a recipe of milk burfee that my family has made for generations and generations. I will be making it for diwali again this year.

    Burfee

    Ingredients

    500gr Klim (milk powder)
    1,25 cups sugar (one & a quarter)
    1 cup water
    Half cup ground almonds
    155g cream
    Half teaspoon elachi powder
    nibbed coloured almonds for decorating


    Method

    -add cream to Klim, rub in, sieve mixture (or blend in food processor for a few minutes)

    -boil sugar and water into sticky syrup

    -whilst hot, mix Klim into syrup

    -add elachi, & almonds

    -pour into tray

    -decorate with nibbed coloured almonds

    -set for 2-3 hours before cutting

    Carrot-coconut burfi came out very well

    Ami,
    I tried out carrot-coconut burfi from the site Arusuvai that you had given earlier.

    Here is a good rasgulla recipe,
    paneer frm 1 litre milk
    2 cups sugar
    6 cups water few drops rose water or rose essence
    1 teaspoon maida
    mix sugar n water put to boil. Mix maida with paneer till smooth, n make small balls. When the water satarts boilng add the paneer balls n boil for 5 minutes then put the lid on the pot but do not cover it full,leave it half open n let it boil for 10 minutes. Remove the lid n let it boil for another 5 minuts.Let it cool then add rose water or essence. If u follow the recipe i m sure u will get the perfect rasgulla n if u have them plz let me know.

    Boondi Gulab Jamoon

    Ingredients
    For boondi


    Gram flour (besan) - 2 cups
    Ghee - To deep fry
    Sugar - 4 cups
    Melon seeds - 1 tsp
    Green cardamom powder - 1 tsp
    Saffron - a pinch


    For gulab jamun

    Khoya/mawa, grated - 2 cups
    Refined flour (maida) - 5 tbsps
    Cottage cheese (paneer), grated - 4 tbsps
    Baking powder - ½ tsp
    Ghee - To deep fry
    Sugar - 4 cups


    Method

    1.Mix gram flour with a little water to make a smooth and semi thick batter.

    2.Heat sufficient ghee in a kadai and pour batter into it through a perforated ladle to make boondis.

    3.Mix sugar with five cups water and boil to make one string syrup. Mix in the boondi, melon seeds, green cardamom powder and saffron. Keep aside.

    4.To make gulab jamuns, mix khoya, refined flour, paneer and baking powder and knead into a dough using half a teaspoon of water.

    5.Heat sufficient ghee in a kadai on low heat.

    6.Prepare small smooth balls with no cracks and fry in hot ghee on low heat till golden brown.

    7.Prepare a thin syrup with sugar and four cups of water. Soak gulab jamuns in it.

    8.Remove from the syrup after nearly half an hour and cover each one of them with boondi and form into a laddoo.

    9.Chill and serve cut in halves.
