I marinate the fish with paste of ginger garlic corriander pudina red chilly an turmeric and after that before shallow fry i coat it with rice powder(in the powder put salt an redchilly powder) the masala does not come out an gives good taste an crispy try it
When you wash fish apply a handful of rock salt or table salt and mix it well .Leave for a minute.You can see the fish becoming glossy. Now ,wash with water (Adding little buttermilk with this water helps removing bad odour) once. Grind a fistful of shallots,a small piece of ginger,half a fist of garlic pods,a spoon of sombhu,one spoon coconut gratings(If you wish) .Grind adding very little water. In a flat bottomed vessel add this masala,add a few drops of lemon or vinegar (For the sour taste),red chilli powder,turmeric powder.Finally add few spoons of corn flour or besan or both.Now,add fish. Adding one egg (both white and yolk) is optional .But,the taste is great and masala bonds well. Keep it for atleast half an hour.This method can be used for cauliflower,yam roast. You can either deep fry or shallow fry. Try this .It never fails.
marinate the masala and refrigrate for 1-2 hours if no time put the marinated fish in freezer for 10 -15 minutes and fry
Add less water , and add some rava or rice powder to keep the batter sticking. keep the marinated fish beside fan for drying .
After washing keep the fish for a little while to drain out water... either keep the plate slanting or use a 'chhalni' to drain out the water.... say for 10 mins... Then make the masala with water/vinegar..dont make it watery neither too dry.. just enough to apply it on the fish..... Marinate the fish with the masala.. and keep for minimum 30 mins... Heat oil in the pan to shallow fry... once it becomes hot put the fish pieces.. when you are putting fish there will be splutterring noise.. keep on low flame.. once that noise reduces you can turn the fish and fry on the other side..
First time i get to know this recipe thru u it sounds great. This can be made with any fish are only with king fish, salmon, pomfrette like those.
