Cooking Quinoa - Quinoa cooks just like white rice. Wash and rinse quinoa to remove any dirt. I use a tea strainer to seive the water from quinoa, so that the small grains do not wash away. Cook 1cup quinoa with 2 cups of water. Stove top - Bring the water to a boil, add quinoa. Reduce the heat and simmer till all the water is absorbed. Takes 10-15 minutes. You can also cook it in the rice cooker. Recipes I have started treating Quinoa just like white rice. I eat it with Sambar, dal etc. It also makes excellent bisibelebath, puliyogre, lemon quinoa etc.
Last week I made a dish using whatever leftovers I had in the fridge and I felt it came out pretty good. It was basically a thai style fried rice but instead of rice I used equal parts of cooked rice,cooked quinoa and cauli rice (cauliflower shred finely). I added a couple of eggs and lots of veggies for a healthy hight protein meal. Let me know if anyone wants the complete recipe.
Hi Veena, I dont have the exact recipe as its a random creation of mine. I will try to give you an idea of what I did. Ingredients I used 1 Chicken Breast 2 Eggs Veggies - Broccoli,Zucchini,Edamame/peas,carrots etc Oil Soy sauce/Vinegar/Sriracha or any chiili paste/Fish sauce Garlic and ginger Grated cauliflower,cooked rice and quinoa in equal portions, mixed together 1. Cut the chicken into bite size pieces. Spray a pan with oil and cook the chicken on high heat along with salt,pepper and garlic. 2. Take out the cooked chickena and add some oil in the pan. Cook the minced garlic and ginger until fragrant. 3. Add the veggies and fry for a cuple of minutes. Add the rice mix along with some soy sauce, chilli paste and vinegar and mix well. 4. Make a well in the middle of the rice and add some oil. Pour in the whisked eggs and let cook for a minute. 5. As soon as they are slightly firm, scramble them and mix well with the rice. 6. Taste and season the rice. I was trying to make a healthy recipe so I only used a couple of teaspoons of oil. But obviously it tastes even better with more oil. I have used the sauces mentioned above on a taste and add basis so I do not have the exact measurements. Let me know if you have any questions.
