    Eggless banana & Walnut Cake cake: - A healthy cake with wheat flour !

    Wheat flour - 2 cups

    Cooking soda - 1 tsp

    Sugar - 1 cup

    Milk - ½ cup

    Curds - ½ cup

    Oil - ½ cup

    Bananas - 4 medium or 3 big

    Sieve maida & soda together.

    Add all other ingredients & blend very well.

    Bake in a medium oven till done.

    Adding chopped walnuts adds to the taste.

    The same is tried with brown sugar+choco chips in muffin tins!

    Eggless Orange Cake with Topping - tastes almost like a soft pudding !

    Sieve together:

    Maida - 200 gms

    Sodabicarb - 1 tsp

    Baking powder - 1 tsp

    Lightly Melt


    Butter - 100 gms

    Beat with


    Condensed milk - 400gms tin

    Fanta or any orangeade - 100 ml

    Orange essence - 1 tsp

    To the mixture of melted butter & condensed milk, add maida mixture & orange drink alternately by cutting & folding.

    Mix essence & bake at 400 deg F till done.

    Topping:

    Orange juice - 3 tbsp

    Sugar - 3 tbsp

    Heat them both together over low heat, stirring continuously till sugar dissolves.

    Pierce the top of the cooled cake with a fork.

    Pour over the syrup & leave uncovered for 2 hrs.

    Shrewsberry Biscuits - our favourite bakery biscuits !

    Maida - 1 ¾ cups - 8 ozs

    Butter - ½ cup - 4 ozs

    Sugar - ½ cup - 4 ozs

    Rub butter into flour, add sugar & work with milk to a firm dough.

    Roll out to ¼ “ thick, cut & bake at 400 deg F for 10mts or more till done.

    Lemon Biscuits:

    Add rind of lemon & lime juice to bind.

    Chocolate biscuits;

    Replace 50 gms of maida with chocolate powder.

    How many cookies will this prop yield for both choc as well as shrewsberry cookies? It has helped make the no of balls* in the past.

    Chocolate Oatmeal Balls - Fancy & nut-garnished.

    Butter - 6 oz – 183 gms

    Brown sugar - 7 oz – 200 gms

    Unsweetened chocolate - 60 gms, melted

    Salt - ½ tsp

    Baking powder - ½ tsp

    Maida - 6 oz – 180 gms

    Vanilla - 1 tsp

    Milk - 50-60 ml

    Rolled oats - 140 gms

    Chopped nut - 6 oz – 180 gms

    Sift together maida, salt & baking powder.

    Crem butter first & continue, gradually adding brown sugar.

    Add vanilla.

    Add maida mixture & milk alternately.

    Work in rolled oats, kneading with hands if necessary.

    Form into walnut sized balls & top with nuts.

    Bake at 350 deg F for 15 mts.

    Makes around 3 dozs.

    Tomatoes Au Gratin - I learnt this 40 years back !

    I used Cheddar cheese for this.

    Tomatoes - 500 gms (peel & slice thick)

    Butter - 2 tbsp

    Chopped fresh basil - 1 tsp
    OR
    Oregano - a pinch

    Grated cheese - 100 gms

    Breadcrumbs - 50 gms

    Salt, sugar & pepper

    Put half the tomatoes in a buttered dish, dot with little butter & sprinkle with a little seasoning, sugar & basil.

    Mix cheese & breadcrumbs & sprinke half on top.

    Repeat again.

    Bake at 400 deg F for 15 mts.

    Serve hot garnished with parsley sprigs.

    Bournvita Loaf - Make this with Boost or Ovaltin, as well !

    Maida - 10 ozs - 300 gms

    Baking powder - 2 ½ tsp

    Mixed fruits - 100 gms

    Bournvita (or equivalent) - 3 tsp

    Milk - 250 ml ( a little more or less)

    Golden syrup - 1 tbsp

    Sieve maida with baking powder.

    To that, add mixed fruits & golden syrup.

    Warm the milk & dissolve Bournvita or equivalent.

    Add to the mixture & mix to get thick pouring consistency.

    Transfer to a greased loaf tin.

    Bake at 375 deg F for 45 mts or till done.

    Serve slices with butter.

    This is ideal to be eaten with tea, but can be eaten for breakfast also.
