    A doubt about Idli!

    Dear Mrs.C
For the past 2 weeks i have started making Idlis with 2 : 1/2 : 1/2 ratio of rice, dhal and aval.Although the idlis are coming soft its not white in color. It looks pale yellow.Do i need to reduce the dhal and aval to 1/4?Please let me know.

    Love
    Suba.

    Please don't meddle !

    Dear Suba,
Idlis coming out soft is more important than idlis coming out white ! Colour can be due to rice quality etc - just don't bother. Do not change the proportion !
    Love & regards,
    Chithra.

    Sheekh Kabab

    Dear Chithra Madam

I was wondering about this kabab..u said roll on the skewers and then when oil is hot, loosen and drop the kababs into the oil....can we do this even without a skewer then...that is press the kababs into that shape with the hands and drop them into oil?

Or is it that the skewer creates a hole thru' the kabab and this facilitates easy cooking/frying?

You Have Answered Yourself, Sunitha !

The idea is to have a hole in the centre to facilitate cooking thoroughly. In the absence of a skewer, previousy, I was using a pencil ! But skewer is easier !
    Love & regards,
    Chithra.

    Hello Heena !

I have just now posted the urls in the other forum where you had asked. Please refer.
Puris, I always buy, never make.
Kulfi recipe is given by Vidhya24 yesterday in the sweets recipe thread.
Tomorrow I am posting mango kulfi. I make ordinary kulfi, the same way as Vidya, but by concentrating the milk instead of carnation milk.
    Love & rehards,
    Chithra.
