    Saboodana Kheer is very popular on the days of pujas and rituals!!
    Let me share with you the recipe of Makhana Kheer – my aunt has shared her recipe with me!!

    Ingredients:

    100gms soft white Makhanas
    1 tsp ghee
    5 cups milk
    4 tbsp sugar or as desired
    1 tbsp shredded almonds
    1 tbsp grated pistachios
    1 tsp green cardamom seeds (crushed)

    How to make Makhana kheer:
    • Cut makhanas into halves and put it in a saucepan along with ghee.
    • Fry over a low heat for about 5 minutes.
    • Add milk and sugar and stir well.
    • Leave to simmer for about 1 hour, until milk reduces to half and of a creamy consistency.
    • During this period stir from time to time so that milk does not stick to the bottom of pan.
    • Now add almonds and pistachios and leave for further 10 minutes
    • Sprinkle crushed cardamom.
    • Serve the makhana kheer hot or cold, as desired.

    This thread is becoming a great one!! Let me share with you my Mommy’s recipe of RasMalai – it is one of the most delicious desserts I have ever had!!!

    Ingredients:
    2 lbs ricotta cheese
    1/2 cup sugar
    32 oz half & half milk
    A pinch of saffron
    1/4 tsp crushed cardamom seeds
    1/2 cup blanched almonds
    2 tbsp crushed green pistachios

    Preparation of RasMalai:

    • Mix the cheese with sugar and little cardamom powder and spread out on a baking tray.
    • Bake at 350 degrees for 35 minutes or until it sets. It should not get brown.
    • Remove from oven, cool at room temperature and cut into 2" squares.
    • Place them in a dessert bowl.
    • Mix the other ingredients, except the pistachios well in a separate dish and pour over the squares.
    • Decorate the rasmalai with pistachios, chill for 2-3 hours and then serve.

    I love RasMalai!! Thank you for the recipe Piya - I will try to make it :)

    We often make Shahi Tukra, when we need to use up bread fast!! It is loved by children!!!

    Ingredients:
    8 Bread Slices (cut the edges out and cut diagonally)
    4 tbsp Ghee
    1 litre Milk
    1 cup Sugar
    1/4 tsp Cardamom Powder
    1 tbsp Kismis (Raisins)

    Preparation:
    • Heat the milk and sugar stirring continuously.
    • Put 1 tsp ghee to prevent the milk from flowing over.
    • Reduce the milk to 1/2 qty. cool the milk.
    • Add the kismis and cardamom powder.
    • Fry the bread slices in ghee till golden.
    • Dip in milk for 2 minutes.
    • Remove and put in the milk piesh prepared previously. Serve cool.

    Shahi Tukra is very interesting. It can be done easily. I will try it!!

    I had Malaai Angoor Kheer at my aunt’s. She was kind enough to give me the recipe. Here it is::

    Ingredients
    Chenna made with 1/2 ltr milk
    Sugar - 1/2 cup
    Water - 1 cup
    Maida - 1 tsp

    For Kheer:
    Milk - 1/2 litre
    Sugar - ¼ cup or to taste
    Cardamonm saffron - little
    Almond and pista to garnish

    Method
    1.Keep aside about 2 tblsp and mix the remaining chhenna with maida and knead to a smooth dough
    2.Roll them into small balls.
    3.Meanwhile dissolve sugar in water and bring it to boil.
    4.Drop the balls in the above sugar solution and cook , keeping it covered for about 15 minutes, sprinkling water over them every 5 minutes.
    5.Mix 2 tbsp of reserved chhenna with 1 Tbsp of sugar and cook stirring in a small fry pan till thick.
    6.Remove from heat and allow it to cool
    7.Boil milk till it is reduced to 1 cup
    8.Add the remaing sugar and stir to dissolve it
    9.Pour over the chhenna mixture and stir till well mixed.
    10.Add cardamom and saffron.
    11.Add the angoor drained from syrup and set aside for about an hour to soak well
    12.Serve garnished with nuts.

    Oh!! All these Kheer Recipes are outstanding!! I would like to try Ras Malai and Makhana Kheer.
    We get jackfruits during summer. This is how I make Jackfruit Kheer::

    Ingredients:
    2 can of Jackfruit
    1 can of Cream of Coconut
    2/3 cup Sugar
    1 tsp rice flour
    1/4 tsp cardamom powder

    Method:
    1 Rinse the jackfruit in warm water. Cut into small pieces Add 2 cups of water and cook till tender.
    2 Thoroughly mix the flour in 1/4 cup water.
    3 Pour into the cooked jackfruit and stir for 5 minutes. Add sugar and stir.
    4-Mix the coconut milk and bring to a boil. Add the cardamom powder.
    Serve hot.

    It is loved by children.

    I loved China Grass Kheer in my childhood. It was one of my Granny’s specialties!! I managed to get her recipe from her tattered diary::


    Ingredients


    China grass packet - (10gm pac)
    Milk - 1 ltr
    Sugar - 1 Cup
    Vanilla Essence / Cardamom powder : 1/2 tsp

    METHOD :
    1. Make pieces of China Grass and keep soaking in water for half an hour.
    2. Evaporate 1 ltr of milk into 750 gms and put 1 cup of sugar in it.
    3. Add 1/2 tsp Vanilla Essence/Cardamom powder.
    4. Remove the China Grass pieces with a spoon from water and add to the milk mixture.
    5. Keep on gas and stir till milk starts breaking slightly. Immediately put off the gas.
    6. Pour the China Grass mix into a greased thali/plate.
    7. Cool. Make pieces and serve.

    Moong Dal Payasam

    Ingredients Needed:

    Split Moong Dal / 1 cup
    Jaggary - 1 cup
    Cardamom - a pinch
    Roasted Cashew and Raisins - for garnish
    Grated Fresh coconut - 1 tsp
    Poppy Seeds - 1 tsp
    Ghee - 2 tbsp


    Method to prepare:

    Heat a pan with ghee and roast the moong dal. Allow it to cool. Then roast the cashew nuts, raisin, keep aside.

    Meanwhile, melt the jaggary with little water and remove scum.

    Take the roasted moong dal in a pressure cooker. Then add melted jaggary to the dal along with poppy seeds, cardamom and if liquid is not enough , add water thats enough to cover the dal. Pressure cook for 1 to 2 whistles or till cooked.

    Once cooked, remove the lid and again cook till you get a smooth consistency, add the grated coconut and roasted nuts. Add the remaining ghee.

    Serve hot. or if you prefer it cold.

    You can use sugar but since jaggary is more good for health, this is always is preferred.

    WowW!! This is a great thread indeed!! You have posted some awesome Kheer recipes here!!! I would like to share with you the recipe of Fruit Kheer that my sister makes. It is particularly loved by children.

    Ingredients:
    2 large Bananas (peeled and thinly sliced)
    2 large santras (peeled into segments with pipe removed)
    1/2 tsp saffron strands
    2 tsp sugar
    1/2 tsp freshly ground black pepper
    1/2 tsp red chili powder
    1 tsp salt
    2(140 ml) cartons curd (plain yogurt)

    How to make Fruit Kheer:
    • Mix the sugar, pepper, chili powder, salt and curd together.
    • Add the bananas and santras and mix together for 2 minutes.
    • Dissolve the saffron in a tsp of water and sprinkle it over the dish before serving.
