Hi Suja Paranthas r a regular breakfast here but i like to hv it just once or twice a week as they r really heavy. As for stuffing it goes with anything from potato, radish, methi, onion, besan, paneer, cheese, leftover rice.............list is very long. i dn't know wat do u mean by 'fried chilli accompaniment', do u mean pudina chatni or Chilli pickle or smthng else?
hi soha, here in dubai most of north indian restaurants offer parathas as brkfast and along with that as side dish they give curd and fried mirchi(green chilli with some turmeric salt lemon filling, or green chilli fried in oil without theekapan(hot) it will be very tasty with paratha and curd)
Hi Suja I am not aware of that thing u get in Dubai but know something similar my mom used to make. We cut green chillies or slit them inbetween. take oil in a pan , add fenugreek seeds & let them splutter, add onions(optional),let them fry a little , add chillies, salt, cover & cook for a minute. Either add kairi(chopped) & cook for 1 min more OR remove from gas and add lemon juice. I don't know why but its taste increases in rain season. I prepare this only in rainy season.
