    Hi,

I can think of the following for an iron-rich vegetarian diet. Most of it can be had almost on everyday basis.

    - Spinach and any green leafy veggie. If you can get amaranth leaves (thottakura) that's the best. This has 3 times more iron than spinach. Usually you get these ones during summers.
    - Raisins or dates
    - Prunes or prune juice (has good iron absorption property).
    - Nuts and legumes regularly (almost every day), especially channa (garbanzo) and rajma.
    - Tofu (you can make palak-tofu, stir-fried tofu or scrambled tofu with indian masalas)

Potassium rich foods like beets helps your body absorb iron. Including vitamin C rich food accelerates iron absorption. Its not only important for you to eat iron rich food but to supplement that with vitamin C or pottasium rich food is also equally important to get the iron into your blood stream.

Eat a lot of green leafy vegetables. Even dates and dates syrup are rich in iron. We indians eat a lot of tamrind and that is one reason that indian men are less anemeic despite being vegetarian.
