Not worth it IMO unless you are storing produce from your own garden. The frozen vegetables from the store are a better option. I once forgot about fresh some cut cauliflower I stored in the fridge for a few days and the smell was enough to clear the room.

Most veggies will get mushy after you defreeze. So you wont be able to makes fry curry. Usually they suit for gravy currys.

Also, I freeze when I cook curry in excess, a cooked frozen curry will seem the same way after defreezing.
However I dont usually freeze veggies as such. I like them fresh and crispy and raw.

The only veggie I freeze for ready use is coconut grated as they get spoiled quickly after pujas.

The link below answers many of your questions asked and unasked:

Thanks for the opportunity to IL’ites to explore this subject of freezing cut veggies
This post made me research and I learnt a lot from browsing not less than seven different web sites.

Some talk about loss of or diminishing nourishment and some veggies should never enter freezer and or refrigerator.

A school of thought opines that this habit in the long run, can contribute for morbidity.

I understood why spouse wraps in papers certain items and why she keeps certain things on a particular shelf ( dedicated space) while using refrigerator.

I understood the why of storing certain items in zip bags some in nylon Meshed bags and some in plastic containers with lid lose and lit tight! Mind boggling sure.
But to save time in following morning rush hour, time anyways spent previous day plus additional time in planning wrapping freezing and then the thawing. It is time management or is it management of time.

Our home freezer compartment of refrigerator - 50 % occupied by certain packed flours: 25% masala powders, cardamom, cashew, dry fruits and nuts. Other 25% free. Occasionally it contains in door section cooking butter, butter for bread, chocolates. Freezing food or veggie is a distant idea here.
Other use of freezer I know is ...
Freeze the drawstring and then it is easy to replace in petticoat.

I too heard that the freshness of vegetables will be affected if we cut and store...
but I do so for convenience.
I generally don't enjoy cutting veggies.
I'm not an early morning person and find it cumbersome to do the complete veggies chopping freshly for cooking.
Im living in India and do not have habit of storing veggies or food items or pastes in freezer. I only store grated coconut or cut coconut pieces in the freezer section as I would use only occasionally. (Otherwise freezer section is filled with dry masalas, home made powders, dry spices, dry fruits, certain flours, etc)
Onions , garlic and potatoes obviously I don't cut and refrigerate,I chop freshly.
But certain veggies like carrot, beans ,beans varieties, cauliflower, cabbage, okra, gourd varieties, etc I prefer to cut the previous day and store in fridge in a steel container ( I don't like using plastic containers in general and definitely not in fridge..only for dry items I use plastic.) Sometimes I'll cut once in two days and store..if cut veggies ate stored more than 2 to 3 days in fridge they seem to lose their freshness and become wilted . So i plan my menu and make purchases of veggies and food prep accordingly.
