Recipes That Use Pre-cooked Chicken?

    Looking for easy to cook recipes that use pre-cooked chicken.

    All cuisines welcome - Indian, Mexican, Thai, Italian, American, anything...

    Please share your own recipes or ones found online that you have tried and like.

    Asking for a friend who is vegetarian and whose son likes to eat chicken. I myself cook chicken from scratch, rarely use pre-cooked chicken except frozen patties.

    I tried this one for her, and it came out quite good.

    Chicken Enchilada using shredded rotisserie chicken (can use any precooked chicken).
    - Just mix the chicken, enchilada sauce from can, shredded cheese, (optional onion, sour cream).
    - Pour some sauce on bottom of baking dish.
    - Put some chicken mix into 6-8 corn or flour tortillas. (I prefer flour)
    - Fold them and place in baking dish.
    - Pour remaining enchilada sauce and more cheese.
    - Bake in 375 deg preheated oven for 10-12 minutes.

    Rihana,
    I put shredded chicken, some shredded vegetables like carrots, sweet corn on a Greek style pita bread, add some shredded cheese( mozzarella, pepper jack, cheddar, anything will do) and bake it in the oven preheated on 400f for 8 to 10 minutes. Family like it :). You can make quick fried rice with frozen broccoli, eggs, some precooked chicken diced or shredded, some soy sauce,vinegar, pepper or garam masala. Chapathi or tortilla roll. I am all for short cuts and anything quick and healthy is always welcome for me :).

    Starting with a rotisserie chicken:
    1) chicken salad: endless variations. I like Ina Garten’s recipes
    2) chicken tortilla soup: I like Rachel Ray’s recipe
    3) Chicken taco salad: Pioneer Woman
    4) Copycat Sweetgreen bowls
    5) Cold noodles with shredded chicken: from the Woks of Life blog. This gets emptied in a few minutes every time I make it. This is one of my favorite food blogs
    6) Soft tacos with chicken and tomato-corn salsa by Martha Rose Shulman. The original recipe is behind the NY Times paywall but there are free variations floating around

    Thanks guys!

    Looks like I will be getting the rotisserie chicken from Costco for her once in 2-3 weeks and giving her the shredded version. I can't imagine her doing that herself.

    @deepthyanoop true, nothing like shortcuts. More so for non-vegetarian cooking.
    @MalStrom somehow thought you were a vegetarian!

    If she is a Costco member she can buy the bags of preshredded rotisserie chicken. The prepared chicken soup sold in the same section is also pretty good, as are the Asian-style wraps.

    There exists such a thing! :worship2: Whenever I get the Costco rotisserie chicken, it is a small ceremony to get H to unpack it and shred it. No less than as if he went hunting for it and got it. Will look for it tomorrow.
    Our Costco has tortilla chicken soup which is great. Will see if there are any other kinds Usually, I get the Costco non-veg stuff and she takes a sample to try.
