    ILs,
    Please share how to eat zucchini raw or cooked. There's plenty of it in this season.
    Worried if I can eat it raw. I like the taste of cucumbers, so like it raw. But often growing up, was told to cook squash.

    I dont think it's any problem consuming raw zucchinni.i usually love grated zucchinni in yogurt sauce( yogurt salt n green chillies with some oil tempering )
    Zucchinni chutney . You could search for any cucumber version n swap zucchinni.
    Zucchini dose also tastes super yum

    Grilled zucchini is delicious, sprinkled with herbed olive oil. Same goes for sautéed or roasted zucchini, dressed with Parmesan.I also like the Middle-eastern style stuffed zucchini. Another option is to make fritters. If you like something sweet zucchini bread tastes great.
    The simplest thing we do is just to serve it as part of a raw platter with various dips: hummus, ranch, Thai peanut sauce, nuoc Cham, etc

    it doesn't need much cooking time, overcooking makes it mushy, it tastes better when it is still hard.

    Zucchini can be used in salads in raw form, pastas, lasagnas, thai red or green curry, in dal, as roasted veggies, chutney, raitha in finely shredded form, patties, etc

    The yogurt with tempering sounds delicious. Will try it. Never thought of swapping cucumber, with zucchini. Will try it.
    When I cook z, I take the skin off.

    I too serve veggie platter with dips, but never included Z.
    I always spell Z wrong, so only writing Z.
    Stuffed Z sounds complicated, will try roasted (baked) with Parmesan.

    Wow, I didn't know we can use it in such ways. I only used in my diet soup. All this time, I am running after Indian veggies, they were not available many years ago. Now, some veggies are available like bhindi, cauliflower, but it is so boring and expensive, to eat it every day.

    Another popular method these days is to eat them as “zoodles” instead of regular pasta noodles. You can spiralize the squash at home or buy it ready made. Sauté briefly in olive oil with garlic and herbs, toss with cheese or serve with your favorite pasta sauce.
