The question is about oil for regular Indian cooking:
dry sabjis, onion-tomato gravy dishes like choley, tadka daal, sambhar, chicken and meat curries, and shallow frying fish. It is not about deep frying such as pooris, vadas.

Which is a healthy oil to use? Healthy as in lower the bad cholesterol and raise the good one.

Would be nice if you can share the brand and type of oil. An online link would help even more.

I use the Chosen Foods avocado oil for everyday cooking. The large bottles are available in Costco, smaller size at Trader Joe.

I use a lot of cold pressed oils.

Salads I use extra virgin oil but I don’t cook in extra virgin oil.

Sesame and gingerly oils are very good for health.I cook veggies in that.

    Also,coconut oil is great.

    Patanjali,24 hour mantra are good.

I think it's better to use natural oils and it is best for our stomach. In that way coconut, ghee ( for seasoning) and olive oil ( salads) and ghee are good. I use the cold pressed virgin oil from Costco. I believe it's better to use all the natural oils our grand parents used for traditional cooking as long as it's in moderation.

It is better to avoid all GMO oils ( Canola, corn, soybean etc or oils made from any other gmo seeds) for gut health( suggested for IBD patients) even though you may find some of these oil good in nutrition and its help with our cholesterol levels.

I personally, have a weakness for ghee. I love food cooked in ghee.
I like EVOO, I eat with everything- like a garnish!

Many are advocating avocado oil or EVO, but Canola oil is not bad either.

While plant-based fats are considered more heart healthy than animal fats, canola oil is generally believed to be a healthier option because it is lower in saturated fat than vegetable oil. Canola, like walnut oil, is one of the few oils that's rich in omega-3 fat ALA—and research shows it may help lower total and "bad" LDL cholesterol.

If saturated fat is a concern, reach for the canola oil. Otherwise, you can cook with either oil with great results.
