    Hi,
I didn't stock up veggies or groceries for the Coronavirus situation. We tried to get some basic groceries and veggies this weekend.
All the shops are empty and we stood for 2 to 3 hours in Costco for billing.
I didn't get onion and tomato anywhere. So, dh got canned diced tomatoes from Costco. I have never used that before. It has 8 cans.
How to use those? I haven't opened it yet.
Can we cook that like our normal tomato? Any inputs?
    Thank you.

Yes,I have used canned diced tomatoes for soup, curries etc. It tends to be watery,so you can drain it and saute it in the oil. I saute it a little longer than the fresh tomatoes. These days I use the tomato paste available in tube. We can use as little as we want from this tube and don't have to worry about the leftovers.

Also if there is no fresh vegetables in the store, look for the frozen ones. They are as nutritious as the fresh ones. Our regular store also ran out of the vegetables and we got some frozen vegetables from Randalls. Better avoid long lines and crowds unless very necessary.

    Thank you @deepthivinayak1..
I wanted to use if for chutney or thogayal. But was wondering how it will turn out. I will give it a try. I never tasted this before. So I thought it will be more sour.
    I have this.

I made tomato pickle or chutney. Two in one. In kadai sesame oil, mustard, urad dhal, diced toamto, chili powder. Cover and cook in slow flame till oil separate. Add roasted fenugreek seed powder for pickle taste. Finally salt for taste. You can add this diced tomato to sambar too but taste will be different,if u add tamarind along with it.you won’t taste anything different.

Thank you so much.. I was also planning to make thokku with it. We call it as tomato thokku. We prepare it and store it and use for rice or tiffin items. I will try that with diced tomatoes. You add the water too or you drain it?

Thanks @deepthivinayak1. I tried thokku/chutney with this recipe and turned out well. Didn't taste different. Same as regular tomatoes.
