    Hi,
I usually buy paneer from Indian stores. It's around 400g pack. I cannot use the whole pack for one time meal. So, I use half and store the remaining in the fridge. I store it using plastic wrap.
I use it within a week. But the paneer is getting wasted and I am not able to use it. I end up throwing the rest of the paneer in the trash. The edges will always become so hard and I see some fungus in there. I wrap it so tight and store it. How do you all store paneer?

Can you make some paneer pakoras or you can make paneer sabzi and store it.

Once paneer is open you need to finish it fast as it is dairy.

I cut half of the paneer into cubes and freeze it in a ziplock bag. Freezes really well.

Once you open the paneer sealed packet , store the remaining in a water. The paneer should be fully and comfortably submerged in water, like 1 cm water above it too, preferabbly in a tight lidded box/bowl. Do check every day, if the water is a little cloudy/translucent, then change water and if necessary wash the paneer block. I usually change water once in two days. Has lasted a week. Usually I use it up in 4-5 days, stays quite nice.

PS- For any food item , even if you see a trace of mould in any part of it , you should not use that whole item . By the time mould becomes visible to the eye , it is already too late.
