I give apple slices, cheese (high end cheeses :))
    nut and fruit mix, cucumbers
You are correct, kids get bored and especially in winter they need something nice and warm, how about soups for lunch? or pasta for lunch that they can heat in microwave. Microwave has a line usually so one can give thermos instead

You have to experiment with cheeses. It is very personal especially because we didn't grew with many cheeses back home.
I used to hate goat cheese, now I like it. I like guda. You can try different cheeses from local grocery shop. Also, the stick cheese comes in different varieties. It is very personal though. But once hooked on cheese, it is a portable, nutritious snack for every one in family.

Quite often we make vegetable dishes at home that are spicy. Cheesing something like that can take out the sting for the children.

Once upon a time, I used to make a stack with a thin slice of baguette, with a few pieces of brinjal or beans, broccoli or bindi (you can tell that I had watched sesame street !!) from the "leftovers", topped with a strip of cheese (colby, muenster, monterey-jack, or the non-descript american were the usual choices), and microwaved 10 seconds would make a nice (portable) snack. The cheese would melt, and hold the vegetable piece to the bread like a good adhesive. For children who'd come home from school and look obviously wilted. Make half a dozen of these at a time, and put them in a small tupperware box. Your child will only eat a couple of them, and trade the others for something totally unhealthy anyhow. If you ask them what they ate for lunch, they will tell you about the twinkies.

Most of my lunch planning is from Costco . They have vegan organic burger and you can pair it up with any type of bread . Frozen veggies , chapatti, pasta and noodles is another combination . Their prize for cheese is reasonable. Don’t buy the shredded one . Get the good quality one . They have so many frozen option . You can literally make lunch in few minutes . Cauliflower crust pizza is another option . This will apply only if you are comfortable getting frozen food . Pita bread is another option where you can mix and match sauce and veggies . Their organic nut butter is cheapest you can find in the market . Honestly for organic stuff I find Costco to be cheapest . If you are looking for Indian lunch ideas then it is mostly veggie paratha , veggie rice . My kids don’t like gravies so only dry food So the options are limited for us

    - Peanut butter and jelly sandwich
    - grilled cheese sandwich and a cup of tomato soup
    - peanut butter/almond butter + milk powder + a dash of fruit jam/jelly - mix them together and make into roundels. A wonderful brain food and very satisfying snack
    - saute frozen vegetables - carrots, peas, green beans, cauliflower, broccoli, spinach all in some oil - if you use onions and garlic - will lend a different flavor.
Add some mashed potato. Mix it thoroughly with the vegetables.
Make spinach/carrot/beetroot chapathis or buy the spinach/tomato tortillas.
    Cut the chapathis/tortillas in half.
Place the veggie mixture on one half, sprinkle some cheese. fold chapathi to form a triangle.
place these on hot tawas/griddle so that the cheese melts and holds the package together.
You can freeze these veggie triangles and heat them up when you want to.
-Sweet potatoes, boiled corn on the cob, sundal,
    - Home made almond milk with saffron and cardamom.
    - Kuzhpaniyaaram - you can make it spicy or sweet by adding bananas

wow some amazing ideas from @mangaii @kkrish @Amulet
I am going to borrow some for myself like the one with pb + milk powder + jam. I am going to do pb + protein pwdr + stevia- for me of course. don't encourage diet food for children. Their growing brains need all the good food in their original state- less processed.

I love cauliflower pizza from costco, but never gave in lunch. Will try it. All ideas are amazing!

    You are welcome @hermitcrab
My kids loved the peanut butter+milk powder balls. I added the jam just to avoid the peanut butter sticking to the upper jaw.

Also, another trick is to present the same food in different forms.
For example - This veggie-potato mash can be served on bread, made into small cutlets, or molded onto ice cream sticks as fun popsicles.
