Am south Indian. Rice is our staple food. But because of diabetes for dad mom had practiced rice item for noon and chapati or upma for dinner. Even I was doing same for while eventually I Incorporated other grains Lunch Broken wheat bise bele bath Quinoa rice and sambar Brown rice and gravy Bulgar wheat pulao Basmati rice baath Sonamasuri for curd rice n kiddo Dinner White rava upma Brown rava upma Vermicelli upma Millets pongal Wheat chapati Ragi dosa Oats dosa What new grains/staple you started using after marriage. What dish u make with those grains
I brought lot of millets in my India trip and they very well replace rice consumption: Finger Millet Kodo Millet Foxtail Millet Little Millet Barnyard Millet Pearl Millet Sorghum I use the above millets in Idli/Dosa batter, directly cook as rice and have them with curries/sambar/rasam/curd, make upma/pongal (sweet and savory), puloas/bisibelebath And also include Quinoa, buckwheat, bulgar wheat, brown rice and oats in place of white rice.
I make like lemon rice, adding some salt, chillies and lemon juice gives good flavour and it is a acquired taste, I have been eating for almost 5yrs now, dont feel any difference
☺️ I tried lots of different recipes with millets and bulgar wheat. Finally Me n dh liked millets in form of pongal and Bulgar wheat in form of bath/pulao. That's y I mentioned those broken wheat I make only bise bele bath. Brown rice won't go that well with sambar but can manage with gravy. After lot of trials we finally sticked to above combos. And true it's acquired taste broken wheat BBB from 8yrs. Other things after coming USA Will try to give pic and recipe of all above mentioned things when I make it next time
Thanks. Even I tried replacing rice with sambar, sadly couldn’t take the bland smell. And also I feel pukish when I replaced wheat rava with rice. As you mentioned it’s good to use it for rice items than plain
Was the parental diabetes (blood sugar, neuropathy, and other related illnesses) in check ? I have read that millets are difficult to store when dehusked. One group contends "Shelf life of dehulled millet is low. Due to high fat content dehulled millets turn rancid early as they undergo autoxidation and get infested by insects. " How is your experience in storing all the grains before you use them ?
Hi Suma, I use lot of millets for dosa, idli, bisibelabath, pongal. I use ragi vermicelli often. And use home made sathu maavu for idli,dosa,puttu. Started using oats, quinoa, brown rice very recently...from january.. tried bisibelabath, mushroom briyani, veg briyani with brown rice and came out well. Quinoa- I try only with dal and veggies mixed together(like quinoa pulao/kichdi). Haven't tried plain quinoa yet. I haven't tried bulgar wheat yet. Is that same as broken wheat? Share some recipes please.
No bulgar wheat b broken wheat is different. Sure will share pic and recipe of Bulgar wheat when I do next time
