I find ‘mommy’s kitchen’ cookery show telecasted on Etv abhiruchi ideal for kids lunch box and snacks.I have tried some of her recipes and my kids loved them. Vegetable soft noodles Drop 1.5 cakes of Ching’s secret noodles in hot boiling water and cook for 3 mins, remove,strain and rinse in cold water immediately. Heat oil in a pan add chopped - garlic, ginger, green chillies and sauté. Add lots of veggies (bell peppers, carrots, cabbage, beans) and stir well on a high flame. Add soya sauce, red chilli sauce, green chilli sauce, vinegar and toss. Add noodles, salt, pepper and toss well, remove, garnish with spring onion greens and serve hot. This is great for lunch box too. Variation - Add scrambled eggs for egg soft noodles or grilled chicken pieces for chicken soft noodles to the above recipe.
Alu Cheese sandwich Ingredients Bread(any of your choice) Boiled alu 4-5 Turmeric powder 1/2 tsp Red chilly powder 1 tsp Salt as required Oil 2 tsp Mustard and cumin seeds 1/2 tsp each Curry leaf and coriander leaf few Cheese slices as required Green chutney( I cleaned washed and grinded together a bunch of mint, coriander leaf and 2 green chilly, 1/2 inch ginger, salt with little curd to fine paste. Tomato ketchup 1-2 tsp Salted butter as required Method Heat oil in a pan and crackle mustard, cumin seeds and curry leaf, now add boiled mashed Alu along with turmeric, red chilly powder and salt. Mix well and close and cook for 3-4 mins, finally add the coriander leaf and set aside. Our Alu stuffing is ready. Now take bread and trim the edges, apply green chutney and tomayo ketchup on the breads, now keep a thick layer of alu stuffing on one side Cheese slice on the other side. Close the bread slices and gently tap. Refer to the above pic Heat a tava add salted butter and toast the bread until golden brown. Remove from the tava and cut into triangle or any shapes.
