My wife and I were eating Barley as a substitute for rice with Sambhar or Rasam for 6 months, a few years back. Not only we dropped a lot of weight but also became very healthy. Our blood work came out excellent. You can't eat much with Barley but at the same time, you can taste our regular Sambhar and veggies. It is cheating the mind to accept Barley in place of rice. Now my MIL is here and somehow we have convinced her to eat Brown rice instead of white rice.

    Yes, artificial sweeteners taste terrible.

After a while you start to enjoy the natural flavours in food, that's one good thing about quitting sugar. It's just a matter of retraining your taste buds.

Jaggery has almost the same GI as refined sugar. This is why replacing white sugar with jaggery doesn't make much sense.

They are awful! They taste sickly sweet (way sweeter than sugar) and artificial. I'm not really a sweets person but I was looking for a good sugar alternative to use to in baking to make cupcakes (and the icing) for a family member that's trying to watch her sugar intake. Tbh, I'd cut rather cut back or eliminate sweets than to use sugar-free sweetener.

This is so true. You also realise just how sweet alot of things already are and that they don't need sugar.

Agave syrup is available in USA, Canada (exported from Mexico). This has a lower GI than Maple syrup. One can buy it at grocery stores.

It tastes much sweeter than regular refined sugar. So one would use much less of it in recipes.
Tips for Substituting Agave in Baked Goods
Look in www for recipes using Agave.
Agave sap is used to make Tequila.
