    Thanks for bringing the memories of eating palakottai sambar in my childhood. Even though our migrated City is Chennai, we lived in Neyveli (South Arcot) for many years. Jack fruits and Cashew fruits are very popular in this town. :)

    It is my understanding boiling the lemon makes the skin tender and soft.

    Right. Maybe we should try it sometime.
    I am like the girl in the anecdote who blindly follows what mom did when it comes to lemon pickles :)

    For the benefit of those who don't know this anecdote:

    There was once a young bride who was cutting off the ends of ham before boiling it.
    Her husband who observed this on several occasions, one day asked why she was doing it.
    She said, "oh, I don't know my mother always cut off the ends of the ham"

    The young man, now really interested to know why her mother did that, called the mother.
    Mother's response, "oh I don't know, my mother always did that"

    So goes the call to grandma.

    "Grandma, mother told that that you always cut the ends of the ham before boiling it. What's the reason".

    Grandma, "I had only one pot for boiling the ham. The pot was very small and the ham would never fit. My solution was to cut off the ends of the ham so it would fit!"

    @kkrish,

    My wife and I used to discuss the various methods of preparation and as my MIL lives with us here, she always tells her method. When I explain how my mother used to do it, my wife declares let us do it the way my mother did it. On further inquiry, I found out that my MIL was following the practices of her MIL. What is the conclusion? I leave it to the ladies here as I can't say it loud. :)

    I actually follow my MIL's cooking style. She was a wonderful cook and a very good teacher.
    Only one or two of my mother's methods do I follow - placing salted lemons in the sun in one of them.

    Tired of the same old coconut, tomato, onion chutney and sambar for idli, dosas?
    Try this mixed vegetable chutney. This is a no onion, no garlic dish.

    MIXED VEGETABLE CHUTNEY

    Ingredients:

    Ridge Gourd - 1 medium (Ridge removed. I leave the skin as much as possible) cut to pieces
    Tomatoes - 2 - chopped
    Brinjal/Eggplant - 1 small - cut into small pieces
    Potato - 1/2 small - peeled and cut to small pieces
    Green chillies - 2 slit(add/deduct per spice tolerance/preference)
    Oil - 2 tbsp
    Turmeric powder - 1 tsp
    Salt to taste
    Lemon juice - 2-3 tsp (half a lemon)
    Water - 1/2 cup

    For tempering:
    Oil - 1 tbsp
    mustard seeds - 1 tsp
    cumin seeds - 1 tsp
    Curry leaves - 4-5
    Cilantro/coriander leaves chopped - 1 tsp

    Here is the picture of the veggies:

    Method:
    • Saute mode on IP
    • When "hot" add oil
    • Add the slit green chillies.
    • Add the tomatoes. stir well two or three times.
    • Add the brinjal pieces and the potato pieces
    • Add turmeric
    • Add salt.
    • Add water.
    • Switch off Saute mode.
    • Shift to Manual mode for 5 minutes.
    • Wait for pressure to release on its own.
    The end product will look this. If you want chunky vegetables, just mash with a ladle or potato masher.

    Add the tempering and the lemon juice. (Lemon juice to prevent darkening from the brinjal)

    I wanted a smooth consistency, so used a hand blender.
    Here it is - Vegetable chutney for idli and dosa.

    @kkrish- thank you very much for consolidating, just yesterday morning I was thinking why r nt we having a index link, it would have been much easier for ppl like me starting to explore with IP. there you are with the index thread, when I chkd the indusladies at work :)
