Surti Undhiyu Its for five people. 250 gm Papdis ( Surti) both ends should be removed four or five small brinjals small new with thin skin potatoes 4 to 5 Sweet potatoes one or two small, both ends should be cut off if they have thick skin peel them softly bananas one not very raw Yam . wash all vegetables yam should be peeled and washed , You need salt to taste Ginger and small green chilly paste..per taste hing pinch of sugar.very little like tea spoon( optional) Ajwain -one tea spoon crushed Half bowl of green garlic crushed Its winter time so people use much but those who dont eat garlic they can make without garlic Haldi pinch of Dry Dhaniya jeea powder about half bowl Coriander leaves one bowl-cut into small and keep aside One bowl of green coconut crushed Baking soda half tea spoon Mix every thing except coriander leaves adding 1/3 bowl of oil you use but best is til oil in winter Sweet potatoes and banana and yam should be cut into pieces but NOT Very Small Cut brinjal and potatoes in such a way to fill stuffs prepared Just taste for salt Roll all vegetables in masala prepared Now take kadhai or pressure cooker(but in pressure cooker colour of undhiya change) Take half bowl of oil and make it luke warm adding little water Many people dont use water at all Put gas on low flame First put papdis and sprinkle masala Then put stuffed Brinjals, Sprnkle some masala,then layer of stuffed potatoes, then yam and lastly Bananas and sprinkle prepared masala Sprinkle masalas after every layer Now close lid and keep on medium flame .It may take 45 minutes or an hour but check carefully so vegetables dont get mashed ,one should not use spoon to stir vegetables When you find all vegetables cooked ,you will find good flavour filling your nose,, Open the lid and put coriander leaves and remaining masalas on it and close and keep it on low flame for five minutes and put off gas Open cover after fifteen minutes ,one can put more grated green coconut and dhaniya+jeera powder Any queries? I am a south Indian so I rarely get Gujarati food and I don't really know how to prepare them. Once I tasted Undhiyu, Dhokla at one of my colleagues home and I just love them. If you don't mind can you help me with the recipes of Undhiyu & Dhokla so that I can prepare them on my own whenever needed
