Lunch Ideas - Creating Balanced Vegetarian Meals

    Arey wah! I sweat, I burn, I almost lose a finger and you want me to reveal the recipe aisehi. Not until you share with me your air-fryer nuske. A friend and I have been discussing air-fryer to reproduce the recipes from wah reh wah YouTube site. So far, disaster! I am scared to buy one of my own now. We can't get around to operate it to charm us away with cutlets, chips and pakoras. May be the batter or the setting.

    Re: recipe, I cook mimicking a lab experiment. Add this, add that, then add something more, no sequence or methodology. By the time something edible is manufactured, I would have forgotten what all I added or how I managed to do it. Take for example this gajar ka halwa.

    (1) I eat at a restaurant.
    (2) First attempt: I cook at home. Something is awry!
    (3) Second attempt: Next time, roast the cashews.

    That recipe has been improvised with milk, honeyed milk, condensed milk so I don't know anymore what recipe I am supposed to use. Don't ask me recipes, I will tell you one and question, did I say pine nuts or walnuts? My cooking is haphazard and rough-hewn. You remember that chemistry and titration? That's my lousy style of cooking.

    Sunday lunch -

    Penne pasta with veggies and arrabbiata sauce, caprese salad. The tomatoes, zucchini, squash, basil, parsley and jalapenos were all home grown.

    Found this pic in my food folder. I don't recollect having posted this but in case I did please ignore. I had come across 'Buddha bowls' aka 'dragon bowls' aka 'super bowls' on Pinterest and this was my attempt at creating one. It seemed like an interesting concept. A good way to include a lot of vegetables in one meal.

    I ate it with a mint - coriander chutney as a dressing. It was a LOT of food for relatively few calories. I couldn't get through the last third of the bowl and ate it later for snack. As you can see it was a bit heavy on the carbs. Going to try one with more protein and less carbs next.

    @Gauri03, nice photo. The buddha bowl is actually many bowls, as served in buddhist nations of Asia -- myanmar, korea, japan have this kind of thing.

    @Gauri03 , when you get one with more protein, do share please. Making a mental note to sub in barley for rice.

    I wanted to thank you for the Red bell pepper soup recipe , so love it.

    @Doree , the watermelon chutney has become a regular at home, even the kids love it.
