    Hi Lakhmi,

The only vadis that i am familiar with are Kothimbir Vadi and Alu Vadi( patra). I have given the kothimbir vadi recipe already. But this is like stand alone snack not a curry. I am not aware of curries being made with the vadi.

As for the sprouted mong sabji, it is called Usal, can be amde with any sprouted bean. I will post the recipe in a day. Just give me some time to draft it up.

    Usal Recipe

USAL : The Marathi version of Sundal. Usually goes well with Rotis and kadhi.

    Ingredients:
1 cup( 240 gms) - moth beans , Whole Moong, Chawli ( black eyed beans) - (soaked overnight and sprouted ),Sprouting is optional
    1 medium sized onion (optional),
11/2 tsp Goda masala( mahrashtrian Masala),
    1 tsp red chili powder,
1 tsp grated jaggery or sugar,
    2tbs coconut grated
    chopped coriander leaves,
    1 tsp mustard seeds,
    1 tsp turmeric powder,
    a pinch of asafoetida
    salt to taste
    2 tsps Oil

    Method
    1. Pressure cook the soaked beans in just enough water for 1 to 2 whistles.
    2. Chop onions into small pieces.
    3. Heat Oil in a pan
    4. Add mustard seeds, asafoetida, turmeric powder and then onions
    5. After onion pieces turn transparent, add the beans ( drained)
    6. Stir fry for 2 minutes.
7.Add black masala, jaggery, chili powder and salt. Cook again for 3 minutes.
Garnish with coconut and coriander leaves

You can add chopped tomatoes and garlic if you like( to be fried along with the onions). Also, you can take 1 tsp of dry roasted jeera and grind it with coconut and add it to the Usal mix.

    Vandhana,
I tried Capsicum Besan Sabji just now and came out very well. Simple and yummy. This is first time I am trying a Maharashtrian dish. Thanks for the recipe. Keep posting more.

    Hi lakshmi,

I usually buy the ready made Goda masala. The MDH brand is good. It should be available in the Indian Stores.

    Dear Lakshmi,

I find Everest Garam masala and their Punjabi Garam masala really good. If you do not get everest, then try Badshah brand they have been around for sometime. When ever you buy please check the expiration dates. Mostly the pack will say " best before 2 yrs from manufacturing" . So look for a pack that has an expiration 2 yrs from now.
