Lunch Ideas - Creating Balanced Vegetarian Meals

    @sumanrathi i thought you were asking me about not having white rice.. i do have, mostly on sundays when i have my lunch with the kids..like last sunday it was berries and nuts pulao, cauliflower stir fry, curds.

    I do have rice and rice based meals...only i keep it in a cycle...

    @butterflyice my kids did not guess it. i had diced it with the chopper and it blended well as porichakootu. and my girl was asking what you are throwing the watermelon white part !! so the whole summer it will have a place in our lunch once a week. watermelon poricha kootu, kootu, sambhar tastes great.

    and they are loaded with vitamins and nutrients if we leave the mental block or stigma..

    A simple meal. ds caught cold overnight because it has become hot here. so it was herbal rasam - ( a hep name for our kandathippili and curry leaves blend rasam), capsicum+carrot sabji, cucumber and roasted flax seeds, papads, turmeric pickle, buttermilk and barley..ful lunch..

    (comment from dd, i am becoming lax at photography. i have been repeating the same background..i told her i am not blogging, when i do i will outsource it to her..)

    AS usual my son left some bananas to get over ripe so that i will do something about it..yeah by now the whole world knows i try not to waste much..but was running short on wheat flour..

    so baked a oats and wheat flour, bananas, in a freshly brewed filter coffee flavor cake. absolutely moist and spongy..and it was like add this that..did not do measurements and it was still forgiving...

    black raisins, cranberries, blue berries and regular raisins along with walnuts and badams. dd does not like much of nuts while ds does not do berries because of texture issues..but they accomodate me in this...

    @pman16 no love not indexed. i wish i could keep track of the recipes i share in this thread. and i do not have the time to dedicatedly do that..but this is a treasure of information that has been shared..by all..

    @shanvy and @karanu -- thank you both for the prompt replies and the information!! I really appreciate. I dont get any of these at my place.

    My big fear is that the regular millets will have husk on the grains and so it will be a pain for me to dehusk and then cook it. Do you know if whole grain form of the foxtail, kodo and proso (which I have never seen so I dont know) has the husk or not? From the picture I cannot tell. If it is dehusked whole grain then no problem. I found whole bajra seeds(kambu in Tamil) here once and it definitely had a husk and I could not make much headway with cooking it.

    @shanvy when you 'break it for upma' as you mentioned above do you pound it manually or do you run in mixie?

    Lot of silly questions -- sorry and thank you both for having the patience to answer. :)

    @shanvy, do you get cranberries in India? I was not aware of that!

    I use the white portion of watermelon too, so far only in dosas :) I can see how yummy it must be in kootu, will give it a try once summer starts. Its hardly spring here :(

    Do you buy the kanditippili in some naatu marundhu kadai? Its on my India to-buy list. Also millets. We get only fotxtail millet here. Where do you buy the millets from?

    Shanvy mam wow wow wow......No words to say.....superb plates....I couldn't guess it's cauliflower stalks poricha kozhambu.....Did you tried water melon poricha kozhambu???"What an idea sir ji"!!!!!Your banana oats with coffee cake really tempting me. Kai pottu edukanam polairukku....Can you give me recipe for this....Wonderful plates too....Pulao with berries and nuts looking great and yummy....
